Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

11.2 oz bottle. Pours dark back with a medium sized quickly shrinking tan head. It has a strong but pleasant aroma of malt and berries. It tastes of dark chocolate and has a very nice roasted taste along with a bit of a smoky taste and a fairly faint berry taste. I really enjoyed this beer a great deal.

Dark rich pour with a medium tan head. Aroma is roasted malt and wine. Taste is fruity and slightly spicy with a nice roasted finish. Smooth and rich on the palate with a spicy, fruity finish that has little to no bitter aftertaste. A nice drink.

Pouring a non-transparent and very dark brown colour, this beer was completely headless. Bad bottle? Fortunately not. The aroma suggested some dark chocolate and burnt coffee. The taste was rather like the nose but there was also an intangible which I surmise was the elderberries. More like a porter with fruit, I think, but very drinkable all the same. Good mouthfeel and finish to boot.

Bottle at home. Black pour with a quickly dissipating tan head. Aroma of bready yeast, red grapes, roasted malts and chocolate. Flavor is sweet and roasted with some nice fruity tones and a decent bitter finish with some burnt malts. Nice spectrum, good balance. Very nice brew.

Bottle. A - Deep mahogany, close to black, with some amber edges. Decent sized, foamy and bubbly tan head. A bit lower than average retention but it settles into some decent lacing. S - Roasted malt and barley as well as some earthiness are dominant on the nose. Also there is a fair amount blackberry/elderberry and some tartness with it. T - A barley and oat base along with a bit of a chocolaty flavor, a lot like a stout. The prominent flavors on top of that are dark fruit (plum and date most upfront) along with some licorice and of course some elderberry/blackberry. Fairly sweet but not cloying. M - Medium body with moderate carbonation. Very silky smooth and even somewhat oily/slick. D - Very nice drinkability. So easy to drink with the mouthfeel and the flavors, just so smooth. A little on the sweet side, but not extremely sweet. Berries aren’t really tart, but aren’t really sweet either, overall it is just a smooth beer. Notes: Nice beer. Not as berry flavored as the name could make you believe. Just a very smooth easy going beer. Some stout flavors, but no real roasted bitterness, and some berry flavors but not really sweet or tart. Nice beer just to drink a couple if you want a semi-sweet beer.

Dark dark colour. Burgundy hues. Slight pinkness to the head. Aromas are rich and fruity, continuing the vinous theme and the elderberry imparts a subtle complexity. A really well balanced beer in which the fruit enhances but doesnt overpower the flavour of the grains. I’d drink this on its own or with any food that demands a full bodied red wine. Another really interesting yet very drinkable beer from Heather Ales.

2008 Bottle - Pours an opaque black without being too heavy, very small white head, aroma is of smoked malt, slightly coffee bitter on the front end, opens up into a great mix of smoke, hop flowers and bitter chocolate, I really dug this beer and would definitely share with others....

Dark brown with a tan head, aroma reminds me of a belgian dubbel, raisins, currants, plum. Initial taste of traditional stout, then incredible fruit flavors. Very nice mouthfeel, aftertaste is lingering and pleasant. Overall, excellent beer, didn’t know what I was getting into, but loved it.

Pours black with a respectable head that does not last. Earthy aroma of roasted malt. Moderate carbonation with a soild full-bodied mouth feel. Taste is very stout-like; coffee, nuts, roasted malt, plus a fruitiness with touches of plum and cherry. Very drinkable and enjoyable. Great beer.

This was an awsome beer. totaly differnt, its the only dark beer i know of that also has fruit to it. A little odd a first but i warmed up to it fast. Starts nice and malty, then you get eddelberry. slight hints of choclolate and carmel.
