"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture, soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

I have to begin with the point that I had no expectations for this beer. It’s not something that I’ve been eyeing at the beer store, or anything similar for that matter. My roommate brought some home and thought we should check it out. I was delighted with the concept of a traditional ale that uses all of the elements that a brew would have had back in the day, but I was not delighted with this beer. It poured a dark black with what appeared to be a reddish hue in the light, no head. It had the aroma of malt and grapes, but when it came to flavor it lacked in both of those departments. For that matter, it sort of lacked in all flavor. It had a weak, light mouthfeel and not much flavor aside from the tannin one would get from a glass of red wine...I can’t say I am impressed. It was alright, but not amazing.

Bottle.from Cheers, Todmorden. Extremely dark with a very thin head. Has a rich sweetness that is balanced between roasted malts and dark fruits. Has a very good nose and almost as good a taste which is not too heavy despite the relatively high alcohol content.

Pours dark brown with a reddish tinge and a light tan head. Aroma is alcohol, roasted malt, sweet smokiness and figs. Taste is smoky and sweet with a touch of coffee bitterness. Finishes fairly smooth with a dark fruit aftertaste. Not bad.
