This year’s Siren Noire Imperial Chocolate Stout has been revamped. We’ve aged it for three weeks in bourbon barrels, which gives the beer darker notes of raisin and fig. We’ve also tripled the amount of chocolate nibs and added vanilla bean. A mix of dark malts gives Siren Noire a well-rounded body that is decidedly chocolatey—but without being extraordinarily sweet. Mt. Hood hops contribute a fruity hop profile, with notes of black currant.

Pours opaque black with a 1-finger dark tan head. Aroma of vanilla from the wood, with a mild note of chocolate beneath. Body is full, but a touch watery, with a light boozy astringency in the finish. Flavor of coffee with chocolate, and maybe some raisin underneath, before the vanilla and some light heat from the bourbon come through in the finish.

Clear dark black brown color with a average to large, creamy - frothy, good lacing, mostly lasting, light beige to beige head. Aroma is light heavy malty, roasted, chocolate, dark chocolate, moderate vanilla beans. Flavour is light heavy sweet and moderate to heavy bitter with a long duration, chocolate, vanilla, bourbon. Body is medium to full, texture is oily, carbonation is soft. [20140315]

UPDATED: MAY 26, 2014 I love this beer. 8oz from tap. Pitch black color with a thin light brown head. Tastes like coffee and chocolate with a thick smooth mouth feel.

22oz bottle pours dark black brown with a tiny tan head. Nose is roasty bitter chocolate, soft earthy dark fruits, faint bourbon. Taste starts with some nice malt creaminess, lots of dark fruit, dark cherries, raisinet, milk chocolate, little bit of bourbon. Finish is roasty semi sweet dark fruit, berries, chocolate, a touch thin.

Bottle. Vanilla, chocolate candy, oak nose. Black, brown lace. Milk chocolate, caramel, vanilla, light leather, somewhat cloyingly sweet. Quite the desert beer, I would be happy to have these flavours and textures in a chocolate mousse, not so much in a drink.

22 oz bomber poured in snifter. Siren noire is rich brown black with a thin head of light tan bubbles. The nose is solid rich dark chocolate. Taste is a hint of sweet on the fore with the chocolate cacao nib bitterness coming through on the finish. Roasted malt provides a decent backbone. Body is smooth and silky. A very well done imperial stout.

Appearance: silky near-black pour, with a short, creamy dark tan head. Aroma: vanilla, chocolate, booze, maple, cream, and more chocolate. Taste: melted bittersweet dark chocolate, vanilla, crème anglaise, caramel, toffee, black bread, with a woody, boozy undertone. Finish: smooth, sweet, and lightly boozy. Notes: Aging in bourbon barrels has significantly improved upon their original version of this, which was average-to-below-average at best. This is really very good.
