COMMERCIAL DESCRIPTION
A more traditional style (to fool the corporate office), golden in color, made with malted and unmalted wheat and gently spiced with Sweet Woodruff. Hopped with Saaz and Styrian Goldings and fermented with two yeast strains. 5.8% Brewed: Jan.13 Bottled: Mar.5

UPDATED: APR 17, 2005 Clouded yellow. Lathery white foam spatters large clingy blotches. Aroma of glazed pears, mashed honeydew, and lemony Styrians. Faint sulfur, musty herbs, and clove. Pristinely conditioned with a creamy fullness. Initial rosewater-softness stippled with drops of lemony acidity and just enough minerally coarseness to lend a sense of dryness to the otherwise-moist and soft lacto tartness. Harmonious interplay of sassy alcohol spice and deeply quenching unripe melon acidity, which constantly beckons you to take another gulp. Dusting of fresh hay and herbs along with lightly-toasted, but firm, pale malts appear in the finish amid candied white grape echoes. Yeast pour accentuates the tartness, but more importantly, augments the peppery dryness. Wow. Such a refreshing take on the style (punctually tart and low in alcohol). This is how I imagine saison 200+ years ago. The fact that the aroma remains engaging despite its being overly yeasty, fairly sweet, and devoid of esters, is puzzling. Less sweetness, more dryness, and more esters would spell “perfection.” Thanks willblake and hopdog!

750 mL bottle. Poured medium orangey-golden with a nice cap of beige head. The aroma picked up honey, apricot skins, and golden raisins over a bready base (more honey down there too).. floral and peppery notes on the back of the nose.. really nice! The flavor found tart lighter fruit skins throughout.. honey and broken down pale malts supported.. more fruit skins and some dry, earthy spices on the tart finish. Medium-bodied and tart as mentioned on the palate.. this showed age, but was still refreshing and engaging.. well done!

750ml capped, thanks Ben! Pours a darker golden with light haze, toward the bottom of the bottle, herbal biscuit, honey and light lemon on the nose. Dusty and bready, light lemon tartness, honey and herbal notes come out in the flavor as well. Hints of tea. Not sure how old this is.

750 ml bottle - thanks to grownfool for the trade; slight hiss upon opening and pours clear gold with thin, foamy white head; minty malt, some oxidation, a little banana, earthy honey; smooth drinking, light fruit, dry oxidation that is a mix of mint and metallic (very minor though); dry honey and stale spelt; very yummy even with the light oxidation; dry honey and stale wheat throughout

Nose is lightly tart lemony with hints of herbs and light spice, a touch cidery and light lactic. Hazy golden orange pour, nice frothy head. Herbal, earthy, lightly sweet and almost jammy - probably the woodruff. Lightly tart and lemony, perhaps lactic. Interesting herbal finish. Nice and enjoyable. Thanks Ben for sharing.

750, capped. Thanks ben! Pours a cloudy burnished dark amber. Loose off white head. Nose comes on almost lactic at first. But thats probably the woodruff, whatever that is. Its an unfamiliar tart berry note, almost jammy but not a jam youve had before. Creamy medium body with lively fizz. Toast, balsamic, and whatever that woodruff berry note is all over the mid palate. Tart finish. Really nice stuff.

Courtesy SoLan. This bottle had a little more than 4 years on it, and I though it held up beautifully. The pour yields a lightly hazy, dark golden body. A smooth, foamy blanket of off-white foam settles slowly to a thick rim, while a soapy wash follows, rejoining the body. The nose shows notes of soured apricots and nectarine, two of my favorite fruits, with some dried candy sugar sweetness and hints of zesty tangerine peel. Some earthy, dusty yeast notes complete the balanced aroma. Flavors again feature the sweet-tart apricot and nectarine notes, with hints of faded, dried grains and a very Fantôme-esque, wild, minty yeast profile. The palate sports a medium, balanced body, with a fine, lively, Champagne-like carbonation. Finishes semi-dry and refreshing. Very good, even at this advanced age.

thanks to Solan for sharing this one! Definitely smells like there’s some age on it, malty, herbal, very earthy nose, with hints of spice. Pours cloudy golden with a thick white head. Lightly sour, herbal, earthy, light citrus. Not bad.

Courtesy Glouglouburp. Lightly hazy gold with plenty of white carbonation. Definitely over the hill but still pleasant. Light colored fruits, cardboard, dusty yeast, sour finish. Medium body, balanced carbonation. Thought this was one that passed me by, thanks for the trade Dany!

2005 750ml. bottle. Never thought I would see this again. Pour is light golden with a foamy white head. Aromas of apple juice, spice, oranges, slight moth balls, and some lemon. Flavor is light with oranges, tart apples, bubbly like champagne, and overall nice flavor. This one is easy drinking and crisp. Nice overall.

Bottle. Pours a hazy bronze body with a white head. Earthy grainy dusty, moth balls, some light spiciness, a bit oxidized at this point. Some citrus and belgian style fruitiness. Good brew thats lost some magic with time.
