COMMERCIAL DESCRIPTION
Another bread yeast beer, this time utilizing wild rice or "Zizania Aquatica". Zizzy incorporates 50 pounds of wild rice and is fermented at a high temperature to develop lots of esters. It's reminiscent of a mild wheat beer with hints of cherry and spice.

Tap at Fette Sau. Cloudy pale cider coloured beer with no head at all. The aroma is quite faint and subtle. Lightly floral character with a light rice/tapioca character and a touch of tartness. Light body, a hint of flowers and a faint caramel flavour. Cidery character on the back. No real hops or malt. Meh, not really all that special.

Notes from NJ brewers guild battleship event: High carbonation, very heady pour with doughy, bready notes in the aroma. Didnt get the significant esters most have experienced, was quite mild with just a tinge of spice and caramel. Very unique, but not one I would or could go back to...

Draft... Cloudy amber ale with a small, creamy, white head. Good retention. Fruity, spicy nose and flavor with esters and phenols of banana and clove and notes of caramel and bread. Flavor has good balance and an additional note of pear. Medium-bodied and very creamy with modest carbonation. Lengthy, spicy, dry finish.

The last of the DRE Heavyweight beers I had that were new to me, this one poured turbid orangy with a weizenbocky aroma of banana, caramel malt, clove, and hopcitrus. The flavor was caramel malty, with some banana, nuts, and brown sugar. Got a bit dry as it warmed, but maintained an above average complexity and balance. This is one of the few beers I got to have two glasses of at this event.

Pale, hazy yellow in color. smell slighty of citrus and rice. The taste was light and thin with the flavor of lemon, grain, and rice milk.

On Tap. Poured a deeper and cloudy golden/amber color with a small sized white head. Aromas of cherry, wheat, bananas, and some caramel. Tastes of cherry, wheat, tofee and some spices. ’Different’ yet enjoyable.

Dickinsonbeer (5075) - Hoboken, New Jersey, USA - AUG 6, 2006
On tap at TDR exton. Pours a cloudy dirty dark yellow with a small white head. Aroma is doughy, yeasty, bread, light fruity esters, hints of banana and cherry-pie. More tart cherry in the flavor but wasnt sour at all- just hinted at having either a brett strain or pedio- but could have been the bread yeast giving that character. Smooth and sweet in the flavor with lot sof fresh bready flavors. Nice crisp finish.

Poured a hazy, yellow orange color with a small, white head that left light lacing on the glass. Aroma of banana, some light clove and other spice, vanilla, toffee, and some cereal as well. Tasted light wheat malts, clove, with some toffee, black cherry, and light sourdough.

On tap at TDR’s goodbye to Heavyweight... Appears a hazy orange toned amber with a small white head that quickly fades out into a small collar. Little speckles of lacing are left aroundthe glass. Smell is bready, starchy, sugary, with pils malt, and light caramel. Taste is of the same aromas. This is a very different beer with a nice mix of sugary, bready flavors that seem to come together in a odd but enjoyable mix. Mouthfeel is smooth, medium bodied, and caramel sweet. Not bad at all considering this one was done with wild rice and some other odd-ball ingredients. I’m looking forward to Tom’s next project!
