POMEGRANATES: In Medieval images of a unicorn hunt, the captured beast bleeds from wounds of pomegranate seeds dripping blood red juices on his milk white body. Wild and uncontrollable by nature, unicorns could be tamed only by virgins. Once tamed, the unicorn was chained to a pomegranate tree. Draught, Avenue Pub. Very dark brown. Not much head. Burly molasses and sweet malt aroma combines impy and barley wine. Both oily and inky. Rich chocolate, intense molasses and dark sugar. Rich. Dark prunes, plums. Only a little bit of alcohol and not too sweet in the finish. Good brew, very intense. Plays to He’Brew’s strengths I think.

The nose is a ruby port/brandy soaked fig and date vanilla ice cream shake. The flavor of this beer hits me as a hundred things all in one. Firstly, a wave of the best tasting cough syrup I’ve ever had mixed with heavy cream. Then, at the end, a blend of every pit fruit I’ve ever had and the approximate acidity of Beyonce’s navel. The heft and luxurious oily nature of the mouthfeel is something to be savored for a long time. I would respect a man who just pours this, looks at it, and walks away in full conformation that he can’t handle the utter disappointment of anything else he opens after this for the rest of his life. This shit is proper to the third degree. Thank You so much Shmaltz. 2011 22oz.

Aroma is of malt, earth, and alcohol. Palate is almost chewy, one of the thickest pours I’ve had. Tastes pretty strong of alcohol, some sharp hoppiness, coffee and serious malt.

So tasty. I get bourbon! Thick and creamy beer with little head. Bourbon smell and taste. Kinda like a dark red syrup with some brown mixed in. Very nice barleywine.

Bottle: brown with almost a red tint. Weird aroma of an old dresser drawer. The taste is extremely delicious with a little wood, butterscotch, and just a bunch of pleasantness. Sweet aftertaste.

Draft @ Avenue Pub. Nearly black tan head. Smells scarrrrrry! Chewy fruity rich and crazy. Caramelized pan fried toasted raisin bread crusts. Powerful and huge. Flavors are toasted raisin date bread. Solid malts character, very much pumpernickel bread character. Intense yet drinkable barleywine. Molasses in the finish. Not as scary as it seemed. Good for what it is.

22oz bottle 1/8/12 (Binny’s Downers Grove)-41° in Snifter-Pours dark brown with a small tan ring for a head. Aroma of bourbon, dried fruits, vanilla, and sweetness. Taste of bourbon, vanilla, dried fruits, caramel, toffee, and sweetness. This full bodied brew is well balanced and hides the ABV very well. Another awesome brew from Shmaltz.

Draft. Pours dark brown with a thin beige head; some lacing. Aroma is dark fruit (plums and raisins), alcohol, and bread malt. Flavor matches the nose with a hint of brown sugar. Medium/full body, medium carbonation, and high warmth. Great beer.

Tap. Pours dark brown with a medium, fizzy light tan head, medium retention with light lacing. Aroma is caramel and cookie malt, dark fruits of figs, dates, and raisins, light alcohol and oak, and earthy hops. Flavor is malt dominant with medium alcohol, heavy dark fruits, brown sugar, medium bitterness with a sweet finish. Full body, high warmth and medium carbonation.

22oz bottle, Batch 1/791 Cases, Bottled on 9/7/2011.
5 malts, 7 hops; Aged in Sazerac 6yr Rye Whiskey Barrels. Pours reddish-brown mahogany color, light tan foam. Heavy legs. Smells of heavy malt syrup, loads of sugar in the nose. There is also a good amount of booze in the nose as well. Fig, date, sugar, vanilla, alcohol aromas. Sweet flavor, there is a presence of fruit sugars like no other. Loads of chocolate malt, date, dark fruit, Whiskey barrel fruitiness. Date and fig is there! So is the barrel, a good amount of burn. Nice chocolate malt finish coats the palate after the burn has dissipated. Goes down like pure malt syrup with dark fruit puree. Very heavy bodied. It is hard to believe that there this is really a beer, as the distant cousin to the American Light Lagers(*sarcasm). Genesis 15:15, Heaven in a bottle.
