COMMERCIAL DESCRIPTION
15 Years and the bombastic beers blossom bolder than ever. The shtick ages so beautifully as well – some favorites from the Shmaltz vault: FIGS: “And their eyes were opened, and they knew that they were naked; they sewed fig leaves together and made themselves aprons.” -Genesis 3:7. POMEGRANATES: In Medieval images of a unicorn hunt, the captured beast bleeds from wounds of pomegranate seeds dripping blood red juices on his milk white body. Wild and uncontrollable by nature, unicorns could be tamed only by virgins. Once tamed, the unicorn was chained to a pomegranate tree. DATES: Song of Solomon 7:6: “How beautiful and delightful you are, my Love, with all your charms! Your stature is like a date palm tree, and your breasts like its clusters. I will climb the tree and take hold of its fruit stalks.” Psalm 92:12: “The righteous shall flourish like the Date palm.” Arab proverb: It is good to know the truth, but it is better to speak of palm trees. Tasted from a 650mL bomber bottle. Pours dark amber with a thin tan head that leaves a thin collar of lace. The nose is toffee, maple, and other caramel aromas with some heat burning the nostrils. The flavor is full of vanilla, coconut, caramel, toffee, and milk chocolate, with just a bit of toasted bitterness balancing. The body is full with average carbonation and a long caramel, oak, and slightly hot finish.

22 oz bottle courtesy of Chris, served in a stem glass at a tasting at Dan’s. Pours hazy orange-toffee with a medium head that remains and leaves a small amount of fine lace. On the nose there are huge notes of rye, oak, caramel, vanilla, chocolate and tobacco. The flavour is medium syrupy sweet with huge toffee, vanilla, rye, oak and tobacco, along with big molasses notes and some earth. The finish is long and malty with rye and oak notes. On the palate it is full in body with a smooth, creamy texture and average carbonation. Overall, wow, a beautiful barley wine. Complex and elegant, truly great. 2014-06-07

Pours a deep caramel/amber with a thin head. Aroma is huge and sweet with lots of caramel, fruit, chocolate, vanilla, and some alcohol. Awesome. Taste is slightly tart and sweet with some nice fruitiness, caramel, chocolate, rye spice, and a nice booziness. Yum! Medium-high body with a medium carbonation. Slightly syrupy but not cloying. Overall a great beer. Sweet with fruit, caramel, rye, chocolate, and booze. Yum!

2011 Bomber - Brownish maple pour with little head. Sweet malty nose with hints of fruit. Taste is also sweet and malty and you certainly get the pomegranates even 2+ years later. Some vinous qualities as well. Good stuff.

Bottle. Finally getting to the deepest reaches of my beer stash. Murky dark brown pour with an initial froth of dark tan foam that recedes to a ring. Dry whiskey with heavy raisin, date, thick and sweet malt and dark fruit in the aroma. Taste has a nice whiskey character mixed with a heavy, sweet barley wine (raisin, date, and some oxidization) with grape. Coating mouthfeel. Heavy duty beer. Nice.

Poured from 22 oz. bottle after cellaring for over 2 years. Opaque, dark brown with a 2-1/2 finger tan head and very good lacing. Aroma of caramel, toffee, figs, dates, Southern Comfort, vanilla and brown sugar. Taste of bourbon, toffee, caramel, figs, dates, vanilla, oak and brown sugar with a significant alcohol burn. FROM NOTES: June 28, ’12 A: Aroma is full of lots of Bourbon, oak, and vanilla, with some earthy hop and a touch of caramel malt and dark fruit. A: Poured a cloudy red-brown color with a thin finger of frothy light brown head. Head fades down at a normal pace leaving behind some good lace. T: Starts off with lots of Bourbon, oak, and vanilla with some earthy hops. Through the middle, more Bourbon flavor comes through with a bit of booze and some light malt, dark fruit, and bitterness. The finish is a mix of Bourbon, vanilla, oak, and some hop bitterness. P: Medium-full bodied with moderate carbonation. Feels smooth with a warming finish. O: Pretty drinkable. Big Bourbon flavor, but the beer holds up fairly nicely with some nice hp flavor coming through.

Bomber, Bottled on 9/7/11. Sweet dark fruit aroma with some booze. Pours dark brown with some ruby coloring mixed in. Not much head or lacing. Strong dark fruit sweetness mixed in with some whiskey notes. Finishes very smooth with the dark fruit coating the tongue with just a hint of booze. Fantastic. ---Rated via Beer Buddy for iPhone

Bottle thanks to Will. Pours a dark brown with small beige head that diminishes to nothing. The aroma is raisin malt, oak, and caramel. Medium mouthfeel with sweet raisin malt and caramel with light bitter finish. Good.
