COMMERCIAL DESCRIPTION
AXUM TEJ is mead or honey wine produced essentially from pure fireweed honey and hand cultivated exotic hops from Ethiopia. AXUM TEJ is naturally fermented wine that has subtle sweet aroma perfectly balanced with the bitter hop character of 13.9% alc. content by volume.

Had a glass of this at Addis Red Sea, the awesome Ethiopian restaurant across from the Cyclorama after Belgian Beer Fest up in Boston. Pours a clear straw yellow. Big and sweet, vinous, light acid. Sweet honey and wine. Loads of honey, buttery. Warm alcohol, sweet hay and toast. Pretty nice.

2004 bottle at Addis Red Sea in Boston. Pours a syrupy looking brilliant gold with no head, lazy bubbles. Aroma of spicy citrus (orange peel, curacao) and honey. Flavor is honey sweet, yet somehow crisp and lightly spiced (must be the hops). White grapes, even apple flavors show up and it has a very delightful body, not thin or watery, nor is it cloying or syrupy. Very good stuff, though I havent tasted many meads.
