his robust yet semi-dry wine is made from darkened honey that produces rich tones and clearly defined layers of flavor. Trapper Creek Dark Mead complements heartier meat dishes, wild game, rich ethnic meals, spicy foods, and chocolate. Best served either slightly chilled or at room temperature.

This Mead is a clear pale brown color with a minimal head and tenuous lacing on the sides of the glass. Fruit and honey in the nose. Full-bodied with flavors of sweet fruits and herbal honey. The finish is sweet with a caramel and fruit aftertaste. Decent overall.

UPDATED: JUL 26, 2013 Bottle, 2013. Pours a dark, fairly clear brown, with a light aroma of sweet dark fruit, like dried figs. Taste is moderately sweet, not sticky, with nice flavor notes of figs and a hint of tangy citrus. Alcohol is noticeable but warming, not harsh, and works with the sweetness and flavors. Finishes with a lingering sweetness. A decent mead. Enjoyable.

750, corked and waxed. Thanks, Adam! These are all really solid. Pours a very dark caramel brown with no head or lace. Darkened caramel and honey notes on the nose, blended like a melted candy bar. Creamy medium body. Dark caramel and honey blended together on the mid palate.

UPDATED: OCT 1, 2011 750 ml. bottle- Pours a clear brown, but red when held up to the light. Aroma is alcohol and honey. The taste is an alchohol burn right off the bat, followed by a nice creamy honey taste, sweet and dry, more intense than the pure honey mead, but I think I liked the pure honey better. Body is medium and mild.
