COMMERCIAL DESCRIPTION
In its quest to continue to be “just a wee bit different” Highland is forgoing the popular practice of aging beers in bourbon barrels and is instead using French oak wine barrels from the Biltmore Winery to do its aging. This beer will rest in the barrels for at least three months in a temperature controlled environment allowing the beer to take on a rich oaky flavor which adds to the complexity of the full-bodied IPA. This beer is golden in color and uses traditional English hops true to the classic ale that has traveled on sailing ships from England to India.

From a growler at Bearden Beer Market. Gold, loose white head. Winey, oaky, piney aroma. Flavor definitely has some wine, some woo, and a nice, crisp hop bite. Just he barest hint of caramel in the background. The wine flavors actually enhance the hops , I think. Not a lot of malt character in this one. I’m not complaining, mind you. This is a very tasty brew and is one could see myself drinking on a regular basis.

Sampled at brewvival 2011. Clear copper pour. Lots of vanilla and sweet hops. It was okay, but i just don’t htink I care for bb aging ipas. meh.

from the keg at Brewvival on 2/26/11. light golden pour with a slim white head. light bitter nose with some oak. medium body - smooth throughout with more layers of oak and a light bitterness. the barrels have really mellowed this out and have created a smooth bitter feel. nice finish with a bit more oak surrounding the subtle bitterness.
