COMMERCIAL DESCRIPTION
Anna (1902 - ? ) was our grandfather’s sister; Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Honey Saison is crafted from American malted barley, European and American hops, Vermont wildflower honey, our distinctive farmhouse yeast and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Anna. 6.5% ALC/VOL 14º P Ingredients: Pale Malt, American and European Hops, Vermont Wildflower Honey, Ale Yeast, and our Well Water.

750ml bottle pours cloudy yellow gold with big 2 finger head. Nose is bright fruity yeast and citrus, some earthy hay. Taste is wonderful mild tart citrus, grain, pear, clementine, fruity. Finish is soft tart earthy orange, pear, citrus, very subtle honey notes linger as it warms. So good!

Bottle from International Trade; cloudy straw yellow pour with frothy white head, sweet honey aroma, sweet taste of honey, with a hint of funk, brett, lemon, citrus, malty backbone, very clean and crisp taste, rewarding.

Bottled: unk ABV: 6.5% Pours a light crisp yellow hidden beneath a persistent finger of white billowy foam. Brilliant clarity. The ale yeast dominates the nose with hints of apples and coriander. The nose also has some lemon and the slightest honey note. Flavor is crisply saison with a good bittering addition of hops and some sweetness from the yeast it seems like. There is an industrial flavor on the beer I can’t quite place, not unpleasant. Good long musty finish. The beer is thin with high and lively carb with a watery finish. Good stuff. Not sure I can taste the honey as much as others can, but a solid beer nonetheless. Serving type: bottle 02-20-2012

Clear, light straw color with fine, pillowy white head. Aroma of spent fireworks, slight funk, spice and slight honey essence. Mouthfeel is flat, water-like, and the body is bigger than the appearance led me to expect. Has a somewhat palate cleansing affect, with a very slight amount of tartness. Finishes very dry. This is unique, and a very nice saison for my palate.

From a bottle
Pours a blonde color with a good head and nice lacing on the glass.

The aroma is peppery & floral with a very mild funk and is nicely earthy. It’s hard to describe but it’s got a strange but wonderful bouquet.

The beer is very satisfyingly dry, nicely tart with plenty of earthy and peppery notes. Some good fruit expression of pear and apricot... just really very bright and really very easy to drink.

The palate is lively, and light (in the good sense)

Bottle:   Bright straw, large foamy white head, nice lacing.   Big sharp tart and wheaty nose, slightly funky, barnish, and floral.   Smells great!   Even sharper on the tongue.   Fairly dry, super tart, wheaty, did I mention dry?   Probably one of the best Saisons I have had.   A bit rustic, but sweet.   Moderate to full body and mouthfeel, bubbley too.   A little unripened apple/pear skin on the exit.   Finishes dry, tart, very tart, wheaty, with soft barn and floral notes.   Musty too.   Great example of the style!

75cl bottle at home, shared with Mathieu87. APPEARANCE: slight gusher! light clouded blond beer, nice stable white head. NOSE: very nice IPA nose for a saison? slight pepper, hoppy, slight white wine nose even, little sour, somewhat sweet. Amazing nose!! TASTE: sweet, hoppy, fruity, somewhat sour. Very good beer!

No head left, orangeish to straw-coloured, fully hazy beer. Flowers, citrus (lemon), dandelion, hay, sourish nose. Very dry to even astringent mouth, with citrus (again mainly lemon), USA-type Bretts; flowery character and a hint at sweetness in the finish. Dry lemon cake. Very highly carbonated, light to medium bodied, close to dry-out effect. Superb balance. Comparable to a great lambic (despite the Wyeastlabs Bretts), but NOT to a Saison, sorry. Bright hazy, sun colored pour with a white head. Nose is fresh and bright with a beautiful and light integration of light fruit and dry grains. Flavor is tight and well integrated, dry, with apple and pear, unfolding with a kiss of honey on the finish. Wonderfully dry and bright with a lot of great stuff going on.

Sample from bottle at tasting. Semi hazy golden pour, rocky white head. Aroma of melon, honey and brett. Flavors of grain, lemon, hay, tartness, floral honey, funk, and green apple. Fairly dry overall, complex and delicious.
