Bottle through an awesome trade. Pours a clear yellow gold, huge fluffy white head tons of spider web like lace. Nose most definitely sour. Tastes tart, and possibly a little of wheat. This is so light, refreshing and just perfect on so many levels. There may be a slight touch of Brett in there somewhere.

Date on the side of the bottle reads 02/2015.
This was poured into a tulip.
The appearance was a hazy yellow color with a soft foamy white head that dissipated within less than a minute. Lacing is somewhat stringy.
The smell starts off with a nice sweet citrus to rustic funk. White grapes, lemon, lemongrass enliven to bring about an extra little spice - what seems like peppercorn.
The taste takes the sweet to combine nicely with the rustic and the funk through the previously mentioned flavors. Spice (peppercorn) comes back to balance and add an extra little kick to it. As it warms, it gets a slight sour to tart edge to it and it’s absolutely fantastic. There’s no aftertaste and it has a quick little sweet to rustic to slightly sour finish.
On the palate, this one sat about a light to medium on the body with a super nice sessionability about it. Carbonated nicely as a saison, I’d say this had a nice semi-spicy to sour to tart feel over my tongue.
Overall, hot damn, probably the absolute best Hill Farmstead beer I’ve had to date.

June 19, 2015 - bottle via trade. Clear yellow pour with some head and lacing. Aroma was citrus, spice, grain and funk.

Clean lightly dry, yet fruity saison. Brett is there, but subdued in a way that lets a bit of the malt sweetness come through--more so than some of the other HF saisons I have had. Really nice beer.

75cl bottle into tulip. Minneapolis.
Pours pale yellow with heavy haze. Small white head with lacing.
Aroma is tart. A little earthy underneath.
Taste is tart, a little sweetness underneath.
Medium- light body. Clean. Longer finish.

On tap at City Beer Hall in Albany. Served in a snifter. A glowing light orange color. Funky and fruity citrus aromas and flavors. Dry yeasty mouthfeel. Tart throughout. Don’t call this a Saison.

Thanks to the young guns. Pale yellow pour. Citrus malty aroma. Lemony light malt taste. Real nice.

The beer is a light golden yellow with a big white head. It’s fairly cloudy with a good sized white head. Excellent retention. The aroma is wonderfully fresh with bright grain sweetness. Earthy yeast complexity. It’s just wonderfully pleasant. Lemony note in the taste. Mushrooms, earth, a little bit of dust. Soft feel, quite light.

Bottled 03/15. Pours light yellow. Lemonade color. Aroma is tart funk lemon, light pepper, really nice. Flavor is lots of lemon zest, acidic. Great.
