Predominantly Clara plus a hair of Edward - not barrel aged. Spiked with funk from dregs of our favorite bottles... maybe even a touch of lemon?

bottle... consumed with the other 3 CD... looks very similar to cd1, lots of big head, great retention... the aroma is super lemony, a bit of pledge... the first sip is a bit rough, a shock of flavor, but it calmed down nicely, wasn’t really liked by the group so I had a few pours, I’d have it again but wouldn’t give up much for it

Bottle at Mikkeller bar, thanks to Nick. It pours hazy light orange, with a massive white head. The nose is spice, hay, floral, sherbet and citrus (tangerine, orange and grapefruit). The taste is farmyard, orange, tangerine, lemon, grapefruit, white grape, brett, vinous notes and floral, with a long, dry finish. Medium body, moderate carbonation and a velvety mouth-feel. Good balance. Delicious and easy drinking.

Bottle at the Mikkeller bar - shared with Anders37 - cheers mate! Slightly hazy gold beer, big frothy white head. Feather light palate, I’m struggling to think if I have ever had a lighter feeling beer! A little dry with mild fine carbonation. Pretty floral start. A little brett. Mild but tasty citrus. Very creamy finish, semi dry with mild minerals. Finally a Hill Farmstead Saison I really like!

Bottle. Shared with Madmitch76. Pours a hazy yellow color with a longlasting white head. Has a fruity yeasty bretty aroma with hints of citrus. Fruity spicy yeasty bretty citrus flavor. Has a fruity spicy yeasty bretty citrus finish.

750 mL bottle opened at the end of our Fantome tasting. Blend of Clara, Edward and some JP dregs I believe? Hazy light golden color with a massive frothy white head with exceptional lacing and retention. Aroma is lemon, grassy and light citrus, with some wheat and earthiness. Light and dry body with a slight lactic lemon finish. Crisp, refreshing flavor, hoppy and lemony. Earthy and grassy flavors balance out the fruitiness. Wasn’t super excited for this blend, but in execution this is really nice.

Shared a 750 ml bottle. Poured a golden straw color with a small white foamy head. Aroma was a touch citrus with a notable sour character to it. Citrus notes, and a touch of spice. Tart notes from brett. Flavor was a nice tart one with a slightly dry finish. Enjoyable, but not my fav it turns out.

Brought this bottle to our Hill Farmstead tasting. Murky pale yellow in color with a fingers worth of fluffy white head. Smells earthy, grassy, some light lemon zest, and grain. It tastes like dish soap. Lively carbonation with a light mouthfeel, moderate finish. Not that good, tastes is off-putting and the nose doesn’t really do much for me either. The lowlight of the Hill Farmstead tasting for sure.

UPDATED: APR 25, 2012 Pours a pretty hazy golden ale with plentiful white foam. Quite nice. However, it falls off from there. Nose is saison - lemon, earthy grass, some grain, and a lot of dish soap. Palate is lovely. Dry, nicely carbed. Taste, however, is the lowlight. It’s soapy and bitter.

Another winner from the portfolio of saisons that Hill Farmstead has. As usual the appearance is perfect with crystal clear straw colored pour with billowy mirangue like head. Aroma is a bit harshly bretty with medicinal and bandaid like notes that were slightly off. Taste however was masterful as always with a nice back end hop bight and notes of lemon, cracker, huge funk, biscuit malts. A little bit peppery on the finish as well.

750ml bottle at a tasting.

Appearance : Clear yellow with big foamy and creamy white head. Nice lacing
Aroma : Nicel floral with saison yeast notes. Light lavender notes. Awesome herbal notes. Slightly pot pourri.
Taste : Great malt with great herbal hops. Amazing floral notes as well. Finish is quite floral and malty. Light floral and citrusy hops
Overall : Awesome stuff. Maybe not as good as batch 1 but still very well crafted. Awesome nose, awesome taste. Very unique and expressive. And wow only 4.5%. Another HFB gem.
