COMMERCIAL DESCRIPTION
Predominantly Clara plus a hair of Edward - not barrel aged. Spiked with funk from dregs of our favorite bottles... maybe even a touch of lemon?

bottle... consumed with the other 3 CD... looks very similar to cd1, lots of big head, great retention... the aroma is super lemony, a bit of pledge... the first sip is a bit rough, a shock of flavor, but it calmed down nicely, wasn’t really liked by the group so I had a few pours, I’d have it again but wouldn’t give up much for it

Pours clear golden with a giant, staying, frothy, white head. Aroma has lemons, funk, crisp malts, apple, soft tartness, pepper and a bit of chestnut. Medium carbonation, rather light and nice dry mouthfeel. Flavour is dry, citrussy, freshly ground pepper, light funky dryness. Freshly peeled green apple. Lovely drynes with a sharp dose of white pepper at the end. Incredible balance.

Bottle. Pours hazy straw colored with a beautiful egg white head. Aromas of white pepper, citrus fruits, barnyard and Fantome... Dry flavor with a nice acidic touch. Fantastic brew.

Bottle shared by yourefragile. Thanks Michael. Civil Disobedience 1-3 side by side. The beer is hazy and pale yellow hued with a towering, white, frothy head. The aroma offers citrus, lemon, grass. The flavor brings forth a nice citrus character, with additional notes of earth, wheat, light funk. Light in body and easy drinking. A delicate hop bitterness in the finish with a bit of sour funk. 750mL bottle, sent from Glouglouburp (thanks a lot, Dany), pours a super cloudy golden with a humungous, slowly-dissipating foamy white head. Aroma is very funky and barnyard, with notes of bleach and soap in there as well. Flavour is very wild and funky, very much like Clara, with almost a bleach quality from the brett, soap and loads of yeast. High carbonation, but fitting for the style. The soap and bleach are a little detracting but it drinks extremely well – super refreshing.

Bottle pours somewhat clear lemony with a huge foamy, creamy white head. The aroma has pepper jumping out with notes of tangy yeast and sandalwood. Flavors bring sweet saison yeast and lemon, some zesty citrus rind, and a bit of dry white wine notes.

In short: A very dry and semi-wild wheaty blonde ale with flowery spiciness. I want to drink a full keg of this 4.5% beer
How: Bottle 750ml. Consumed when approximately 6 months of age
The look: Cloudy yellow-blonde body topped by medium white head
In long: Nose is mildly funky, nice rustic brett presence, countryside field flowers. Taste is dried wheat, dried countryside wild flowers, smooth bretty notes, dried coriander, lemon zest. I’m suspect something happened with time to the yeast because there was something very dusty (pleasantly dusty) in this beer. I definitely can recognize the Clara in there but it has been funked-up, dried-up and spiced up with dried coriander, dried lemon peels and more. I’m not saying these ingredients were used, just that it tastes like they were. Nothing watering or slim in about this 4.5% beer. Both the wife and I really loved this beer, but we are biased toward the style since we are two Saison whores (although my wife doesn’t like to be called a Saison whore, she prefers “Saison Escort”).

Bottle after the Hill Farmstead Saison Fest. Had this courtesy of one of the kindest and coolest guys in the beer world. As this was around a bonfire late at night with my head lamp for light and a few beers under the belt I realize this was not the ideal condition for rating this, but as this was a beer I’d missed and wished I’d tried, I figured I needed to note my thoughts anyway. Pours a lightly hazed but mostly clear gold with a medium to large white head. Big musk and funk on the nose, soft musk. Fuzzy musk with faint styrofoam and phenolic notes. Medium bodied, sweet with wheat and citrus, musk and soft wheat and toast. Musky with some herbal touches. Long musk, wheat into the finish. Musky, with a gentle sweetness and faint herbal and citrus notes. Incredible. Love to try this again in better settings but incredibly memorable either way.
