COMMERCIAL DESCRIPTION
A blend of 5 beers from Four Select Oak Barrels.
Civil Disobedience, our non-violent protest against the homogenization of flavor, comes in the form of a spontaneous, circumstantial, and unpredictable series of beer releases. We relinquish control in favor of an anarchistic collaboration of microbial activity. This is the expression of our conscience, our opposition to oppression, and an act of creative freedom.

Bottle. Pour is dark reddish brown with a small tan head. Aroma is interesting - notes of dark fruit, light funk, faint roasted malt, light cherry, and red wine notes. Flavor is tart up front with red wine notes following. Also notes of wood and faint fruit. Tasty, but the finish is a bit harsh.

Bière brune au nez sauvage, acide en olfaction, avec un peu de gomme baloune. En bouche, l’acidité flirte avec la complexité du profil sauvage, le boisé... le vin rouge. Une belle bière de dégustation.

Bouteille de 750 ml, lors d’une dégustation. Arômes de brettanomyces, de malt légèrement torréfié, de chêne et de vin rouge. Robe brune aux reflets roux, effervescence assez active et peu de mousse. En bouche, le passage en fût de vin est bien remarqué, avec une forte présence de chêne et des notes vineuses. Le malt apporte surtout des accents chocolatés, alors que les brettanomyces contribuent une belle rusticité. Rappelle la Phenomenology of Spirits de la même brasserie. Très bon, mais un peu sous le niveau des saisons de Hill Farmstead.

Craft Clerkenwell Tasting. Thanks as always to Leighton for keeping us in Hill Farmstead. Hazy dark red - brown beer, Big pale cream coloured head. Light fluffy palate, semi dry. Light sourness. Mildly tart fruits. Touch of malt cream. Semi dry finish. Not bad! Drinks well below it’s abv.

dark sepia, cream ring oily small bubbled head. Dusty nose has currents, lightly sour stout qualities, beer nearing consecration without the acidity. Flavor more acidic but balanced, light cherry stout notes upfront merging with Brett and hay, drying mid before a slick finish with light raisin, slick acids. Balanced but fairly simple for HF, and not nearly their common lightness.

Bottle split at Craft Clerko, thanks to Nellie then Leighton, 26/06/13. Murky mahogony brown with a tan head that clears to a film. Some little floaty friends make themselves known! Nose is sour cherries, tarte berry fruit,oaky wood notes, light smoke, burnt straw. Taste comprises tarte berry fruits, touch of yeast, grass, funky, famyard, light herbals. Medium bodied, fine carbonation, dry crisp finish. Solid enough stuff but came over more as a sour than a saison to me.

Split a bomber with Sherm1016. Thanks! Only my second Hill Farmstead so happy to have a chance to sample / imbibe. Pours almost black with full frothy head. Nose and initial taste is sour with interesting notes of smoke and cherry...oak in there too - or that’s what I guess it to be. Tasty.

750ml bottle, a gift from Dan and Tim, split with dwm1034. Pours a deep, dark brown color with a huge tan head. Aroma is red wine, sour cherry, grape must, oak. Medium on the palate with soft, smooth carbonation. Flavor is lightly sour, more sour cherry, a little roasty coffee, a little smokey, a little yeasty, with a light sour finish. Very complex. Not sure all the flavors work together perfectly, but very interesting, and tasty too.

750mL bottle, sent from Glouglouburp (thanks a lot, Dany), pours a deep dark brown / near-black with a large beige head. Nose is very complex, full of farmhouse notes, deep earthy notes, oak barrels, some wood tannins, a little roast, and a touch of dark fruits. Flavour is remarkably complex, full of wood tannins, oak barrels, a strong earthy farmhouse dominance, some mild lactic notes, light-to-moderate sourness, yeast and some dark fruits. A blend of stunning complexity here, with all the notes working in incredible harmony. I feared the carbonation would be too lively, as has been the case in many other black saisons I’ve had, but this is perfectly suited. One of my favourite Hill Farmstead beers and one of the best black saisons. Remarkable.

Bottle shared at CBC Clerkenwell - big thanks to Momma Smith for picking this up and to Sister Nellie for bringing it to London (via Cluj, Romania). A moderate gusher! Pours dark brown with a creamy, beige head. Good and tangy berry aroma, big funk, leather, grapes. Light sweet flavor with some sweat, leathery dark fruits, ripe berries, sturdy wild funk. Light to medium bodied with average, creamy carbonation. Fairly tangy to finish, some acetic bite, more sweaty and leathery fruits. Another great one.
