A blend of 5 beers from Four Select Oak Barrels.
Civil Disobedience, our non-violent protest against the homogenization of flavor, comes in the form of a spontaneous, circumstantial, and unpredictable series of beer releases. We relinquish control in favor of an anarchistic collaboration of microbial activity. This is the expression of our conscience, our opposition to oppression, and an act of creative freedom.

750 ml bottle shared by bsuedekum- thanks again, Blake! Pours a dark brown, mostly opaque, with a big beige head that leaves plenty of lace in the glass. Aroma of earthy funk, oak, dark fruits, roasted and chocolate malts, soy, and a hint of lactic funk. Flavor of dark fruits (mostly plums and berries but also currants), brown sugar, roast, oak, and lactic funk. Medium-bodied, with a medium carbonation and a tart, roasty, earthy, sweet, and dry mouthfeel. Complex and tasty.

Pour from a bottle thanks to Tim once again. Black in color with a robust off white tan head. Aromas were of tart dark fruit and roasty malt. Medium in body with appropriate carbonation. Flavors were of some light chocolate, wine, oak, tart and slightly sour cherry and plum. All the flavors blended and mixed together very well. Definitely some wild sour bacteria going on and very tasty. Would like this beer again.

Draught at the Festival of Farmhouse Ales. Dark brown, almost black with a nice, thin, fine head. Nose is a little bit of vegetables, a bit of chocolate, cocoa, lemon, lactic. Flavor is rather sour, chocolate, dark berries, cherry, creamy yogurt. Pretty interesting. Not perfect but nice. Grassy finish.

Draft at Festival of Farmhouse Ales 2012. Pours a gorgeous rich black pour with a beige head. Nose and flavor are rife with a stunning melange of dark plum, raisin, roasted malt and bitter chocolate, tart vinous notes, dark earthy dirt and light spruce character. Touches of wood. Complex and rich in its flavor, one of the best dark saisons I’ve had. Yet another winner from Shaun.

on tap at saison festival, 2012. pitch black with a creamy beige head, very good retention and lacing. delicately roasted malts, hints of smoke, hints of sweetness, bretts, layered in oak, light acidity. lively and soft carbonation, medium to full body, very nice medium long bitter coffee and citrusy-grassy finish. really enjoyed this one with a burger!

There’s a faintness of saltiness in the aroma, otherwise composed of a fantome-like mixture of chocolatey bitterness, red wine, rotten fruits and animalness. Tart, and only lightly dark flavor; malts seem complicated and prevalent, but the flavors are somewhat hidden in an interesting way. Brisk, dusty palate has some body to it; finishes with a dry whisk of cocoa powder, and lasts for a bit.

On tap at 2012 Hill Farmstead Festival of Farmhouse Ales. An appreciated change in direction. Light cheese and oak aroma. The dark malts and blending nail the structure of this beer. The bigger beefier alcohol shows, but plays well off lactic acid and oak dryness. It has a nicely juicy, chewy texture that I think the dark malts help build. Very good.

Hazy brown/red with a medium sized, Light tan head that left nice lacing on the glass. Aroma of wild yeast, light acid, vanilla, dark fruits, some roast, and a bit of spices. Taste of cherry, light vinegar, dark malts, vanilla, And a tart finish.
