Bottle at home with friends. Poured a deep brown almost black with a frothy tan head. Smell is wood, funk, brett, earth, honey, and bread. Taste is lightly tart, earthy, honey, light vinegar, dark fruit, and a hint of roast. Creamy body with medium carbonation. Pretty nice and interesting stuff.

Pour out of 750 mL bottle, is dark brownish black with off tan head, aroma has notes of caramel, vinegar, some slight funky yeast notes, touch of earth, roast and chocolate, hints of ash as well. Taste is a mix of dark chocolate and roast, lots of ash, some funky earthy notes, hints of acetic and slightly tart notes, slight vinegar, finishing fairly tart but ashy and roast. Interesting for sure.

Bottle @ Stephen’s house, courtesy of Stephen. Thanks! Hazy dark brown appearance with a fluffy brown head. Tart dark berry, blackberry, tangy, floral, barnyard aroma. Tart, burnt roasty, dark blackberry, funky sour, somewhat spicy, earthy flavor. Interesting stuff.

Served in a Hill Farmstead wine glass.
The beer is opaque, a deep, dark shade of chestnut brown. The head is over an inch thick, receding quickly and settling in at around a half inch. Copious lacing all over the vessel.
The aroma is funky, earthy. Notes of wine are evident from the start. Tart fruit, perhaps currants.
Great flavor. Everything comes together beautifully. Delicious. What a complex and fantastic beer. Lots of tartness and wine barrel notes. Dark fruit character.
Medium bodied and smooth. Lingering sour, lactic, tart feel on the palate.
Overall, yet another fantastic brew from Shaun and the folks at Hill Farmstead.

A 3f Kriek or framboise with some darker malts worked in. Slightly acidic mouthfeel, cherry skins, roast, some light darker fruits. More like a sour than a saison at this point but a great beer that may improve a bit in the next 6 months, but I wouldn’t let it go longer than that.

Thanks, Michael. Served in Hill Farmstead stemware. Pours a fairly-dark brown with a moderate tan head. Needs a bit of time. A bit too much oak. Light acidity. Dark fruit. Some currant. Slightly tannic. Touch of roast. Will revisit in a few months.

Poured into some Hill Farmstead stemware. A finger’s worth of lightly-tan head rests on top of a murky dark brown body. Nice lacing on the glass. Black currants, cocoa and a hint of smoke on the nose. Earthy oak notes in the background with a touch of soured grape. The flavor is a nice continuation of the nose and brings out some soured cabernet notes and grassy earthiness. The body is smooth, almost creamy, with appropriate carbonation and a refreshing level of sourness throughout. Overall, an excellent black saison. Slightly reminiscent of Russian River’s Consecration.

Poured into a Hill Farmstead glass revealing a finger or two of tan head over dark brown body. Caramel and smoke on the nose along with a bit of lemony funk and a stone fruit floral essence. Taste is slightly tart and evocative of grilled unripe plum with some smoke and woodiness on the finish. Earthy underneath. Lively carb on the tongue, medium-bodied. Overall very refreshing and deliciously complex.

Pours black with high creamy beige head. Nice lacing. Aroma is of bretts, funk, fruits, sweetness, roasted malt. Taste is of bretts, citrus, some acidity. Overall: Very good, ballsy mix. Somewhat acid finish.

Beautiful beer. Pours dark brown-black with thick creamy beige head. Nice lacin g. Aroma: Wine, roasted malt. Taste: Roasted malt, resinous, citrus, winey acidity. Strange mix of flavour, but that’s really good nevertheless. Only bad point is the high acidity that makes this beer not easily drinkable.
