COMMERCIAL DESCRIPTION
A blend of 5 beers from Four Select Oak Barrels.
Civil Disobedience, our non-violent protest against the homogenization of flavor, comes in the form of a spontaneous, circumstantial, and unpredictable series of beer releases. We relinquish control in favor of an anarchistic collaboration of microbial activity. This is the expression of our conscience, our opposition to oppression, and an act of creative freedom.

Bottle (750 ml). Dark brown with a huge frothy/creamy head that diminish quickly to leave a beautiful small persistent off-white head. Tons of lacing. That’s a beautiful beer! Aroma of citrus, wine, sourness, wood, funk and slight roasted malt. Taste is winey, funky, citrus, raisins, dark fruits and roasted notes. Mouthfeel is dry and acidic/vinous. That’s a weird beer! Not a bad one but a really special one.

UPDATED: JUL 16, 2012 On Tap at Hill Farmstead Tap Takeover at Positive Pie in Plainfield.

A - Huge carbonation of 4-finger head with a leather appearance. The beer is dark brown to black. Clarity is pretty great.

S - There’s this really pleasant farmhouse funkiness on the nose. Brettanomyces? I get a hint of Raspberries as well. Very sweet and tart.

T - Lots of tart characters but a solid nutty malty finish. Smoked malts are pretty up front. Very tart as the malts fade. Funky and wild for sure. There is a underlying white wine taste that has me excited.

M - Swishing in my mouth, I only get 10% re-carbonation. Very light body with a nice tart malty finish.

O - I’m VERY happy I tried this before the release this weekend on tap. I was not sure if I’d get all 4 bottles for myself but now I am. This beer is PHENOMENAL and it’s only going to get better.


UPDATE: Bottled Version

Appearance is more carbonated so therefore a 4-finger head, overflowing bottle of carbonation even though it’s sat in the fridge for 3 days and gorgeous head lacing. Beer itself is the same.

Smell is unchanged except I get more lemons on the nose.

Taste is the same except more tart, more sweet and less nutty than the draft version. Very tart and far more closer to a wild beer than a saison

Huge difference in carbonation on the mouth feel. Getting 80% carbonation on the mouth swish versus on tap. No malts on the finish but there is toffee

Overall, this beer is greatly improved in bottle form. I can’t wait to see how this ages. Glad I have 3 more of them. Increasing my rating from 4.5 to 4.7.

tart grapes, earthy maple/chocolate notes in the most abstract sense. Hay, slight citrussy white/red grape character. incredibly complex flavors. uber dry finish. great beer.

Dark pour, active carbonation, dark grape juice, some roast, minor funk, some tartness and touch of coffee. Wieird, interesting and damn good

Pouring at the second anniversary party. Pours a deep black with a medium to large beige to tan head. Sweet roast, toast, funk, and musk on the nose. Medium bodied, roast, funk, and some light lactic acid. Roast, more soft lactic notes, sweet with a touch of sweet tarts, acid and wood. Lingering bright acid. Beautiful balance and restraint on this.

bottle during VIP. pours a dark brown almost black color with a moderately sized head. smell is a bit roasty with some esters, lactic sourness and dark fruit. taste is dark malt but not roasty light carmel with touch of tartness and fruit and a moderate hop presence.

Tap at hill farmstead ann party. Draft list said 8.5 percent abv, rather than the 5.6 currently listed on ratebeer. Moderate cherry sourness, light roast and milk dud sweetness. Wet wood. Dry. Tastes find, but seems a bit muddled compared to typicalclean focused hf beers.

750 mL bottle shared by Shaun at the VIP event prior to the Hill Farmstead Anniversary party. I haven’t figured out the exact blend in this yet, but here are my notes: Very dark pour with a great off white head. Hard to tell exact SRMs in the dark. Lots of dark saison notes- think Phenomenology of Spirit. Dark fruit notes but never in a sweet way- think the driest crispest dark fruit notes you’ve ever had. Like Rochefort 10 without sugar. Lots of roasty, smoky, lactic notes follow as well. Very weird and unique, but not bad. Just different. Great body with medium to high effervescence allowing for a billowing mouthfeel and a dry lactic finish with very small hints of roasted malt. This was a fun beer to try!

Sampled on draft at the anniversary party. Pour is dark brown to almost black with nice billowy head. Aroma is citrus, funk, oak, and herbal spices. Taste is quite unique and very good the bugs are nicely done and provide the majority of the character to the beer. Acidic and dry with very light roasty fruity notes. Good stuff.
