Bottle shared with GT2 via Dany. Thank you boys! Bright, hazy golden pour. Small head, great lacing. Aroma is Vitamin C, citric fruit, fresh strawberry acid and raspberry, roses/flowers, flash of dough and white sugar. Taste is cherries, raspberries, sugar, sourdough, Vitamin C/citric. Palate is light acid, sweet and sour blood orange. Full bodied for saison, but not sticky or anything. Not watery. Nice buoyancy. Liked it overall.

>> Cellared at 55F since acquiring- slow gusher upon opening. Poors low haze glowing straw gold on first pour. Second pour is a glowing, full haze vibrant golden. Dreg pour is muddy tan. Small white foam after a tepid pour. Extreme lacing all over the glass over the course of the experience. Nose is quite exceptional: fresh white grapefruit sections and pomelo, ugli fruit/Thai orange, Hill Farmstead’s house yeast character of sweet cream butter and fresh biscuit, flashes of 3F/Girardin style moldy red grapefruit rind with bright acid. Opens up to some cellared De Dolle Dulle Teve type of yellow apple and heavy attic, cinnamon spices, rich black cherry pit, no esters thankfully. In taste, slightly chalky and biscuity/bready with A slight leatheriness in the palate hints at something more in the grapefruit rind 3F/Girardin style of lactic complexity. There is very little to no acid, some pineapple upsidedown cake. Carbonation is low robbing this one of some effervescence that could really up the ’quenching saison’ level. Subtle palate gives some chalkiness, some dough, slight flashes of paper hint that this beer is about to take a dive cellaring wise and you should be drinking your bottle(s) very soon. Overall, it is a worthy addition to this absolutely breathtaking series of saison masterpieces (well except for that black saison one). This one is a sipper rather than a big gulping quenching.

Bottle shared at the brewery, February 2013. Glorious beer. Pours lightly hazy, orange-gold with a modest, frothy white head. Engaging aroma marked by a restrained farmhouse funk and suggestions of tangy tangerine and lemon. Light sweet flavor with carrying on lemony tartness, low bitterness, mild acidic twang, juicy ripe tangerine, hints of grass and pale wood. Light to medium bodied with fine, massaging carbonation. Very clean to finish with decent funk notes, barnyard, tangy citrus fruits, oak, lemon. Delicious beer. Exceptional.

Bottle, shared for gyberic’s birthday – reviewed from notes. Aroma has light brett, light sulfur and an odd waxy/glue character that I can’t seem to shake off. I don’t pick up much wine notes, but there is a funky, catty ripe fruit whiff at the end. Pours a clear golden color with tiny white head on the sides of the glass. Taste is has a bit of plastic and wax, some lemon, lime saltiness, musty wood, and perhaps a touch of honey. It is a little bit on the sweeter side at the end. Body is medium with medium carbonation. It does not finish very dry, and starts to have a fruit character as it warms. Not sure if this beer is past its prime, but I enjoyed CD#6 much more during the side-by-side.

In short: A very funky, oaky, dry and tart blonde ale. For the Extreme-Saison lovers.
How: Bottle 375ml, a few times, this rating for a bottle consumed 7 months after the beer release.
The look: Cloudy blonde body topped by a medium white head with good retention.
In long: The surprisingly strong nose is intensely wild, a whole lot of white wine barrels, a fruity tartness, fun notes of aged cheddar and other lactic stuff. In mouth the beer feels very lively, an expansive carbonation filling the mouth. Taste is a wet-dream for the dry funky tart beer lover. A strong farmhouse personality. More funk than in a James brown concert. Plenty of mouth drying oak. Dry cereals flakes. Quality aged cheese and yogurt. Mild tannins presence. No sweetness to be felt, this very dry and somewhat astringent too. An assertive fruity tartness (tart white grapes, lemon and others) that unfortunately prevents from taking big sips. First time I had this beer fresh and I noted some honey but a slightly aged bottle had no honey and a lot more funky tartness, this beer has developed quite nicely. Wonderful beer, one of HF best. This rating has been rated PG-13 for brief offensive language, this is a fucking great beer.

Bottle... Hazy, light yellow pour with a small, white head that dissipates faster than you can say “quick.” The bouquet is complex and multi-layered – woody, acidic, lightly funky and lemony with a touch of vanilla. Light-bodied with zippy carbonation. The flavor is terrific, but offers no surprises – lemony tartness accompanied by mild, crusty bitterness. Finishes funky, tart, tongue-numbing and dry. Big thanks to ctipping for the pour!

UPDATED: SEP 5, 2013 Bottle, shared by NJ Alan, had a bottle of this but sent it to a trading partner, stoked to finally try it. Pours cloudy, hazy gold, hues of orange mixed in. Aromas and flavor of lemon sorbet, brett, light barn, blood orange, oak, peach nectar, lime zest, and lemon skins. Light carbonation with a medium to fuller body. All kind of dried fruit along with the super dry finish. Easily one of the best b.a. saisons’ I have had the pleasure of tasting. Had a similar body and appearance to Mimosa and Juicy Amazing!

375mL bottle, sent from Glouglouburp (thanks a lot, Dany), pours a hazy blonde / yellow with a medium white head. Very aromatic nose, full of complex wild yeast, white wine barrels, rustic farmhouse notes, and some citrus zest. Flavour is supremely complex, full of white wine, wild yeast, rustic farmhouse notes, a touch of barnyard and a little citrus zest. Incredible depth to this, with a wonderful blend of the different flavours. Everything really works together in perfect harmony. The finish is very vinous, wild and zesty. Exceedingly high drinkability as well. A saison of remarkable depth.

Bottle I shared with Andy, Max, and Pearl prior to our trip to the Hill Anniversary. Pours a hazed gold with a thin white head. Loads of fuzzy musk and a bit of phenolic yeast on the nose. Gorgeous aromas, simple and subtle with so much going on. Delicate funk moves to a light barnyard note with some earthiness and the faintest hints of cheesiness. Very easy drinking, light and delicate. Picks up a bit of a lemony note into the finish, tart and bright. Loved this.
