Clara (1906-1969) was our grandfather’s sister; Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Grisette is crafted from American malted barley, Vermont Organic Wheat, European and American hops, our distinctive farmhouse yeast and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Clara. 4% ALC/VOL 9º P Ingredients: Pale Malt, Organic Vermont Wheat, American and European Hops, Ale Yeast, and our Well Water.

Thanks to Andrew for this tasty pour. Tart earthy lemon nose. Tart yeast lemon flavors. Malts that are slightly sweeter. Not quite as good as Arthur, but I’d drink this most any day. 8/4/7/4/15

750 ml bottle. Pours a cloudy orange color with small white head. A big citrus soft woody nose. The flavor is lemons, sour sawdust big funky tropical brett. Bready biscuit malt base. Pretty light and smooth. Quite drinkable.

750 mL bottle from the brewery, 3/24/16. Hazy orange, large foamy off-white head, good retention. Aroma of yeast, wheat, oats, orange, pineapple, guava. The taste is yeast, apple, oats, wheat, spice, lime, lemon. Mediumbodied, bright, refreshing, lingering tartness, bordering on funkiness.

Bottle at Culmination Fest 16: Poured a cloudy golden with a white fluffy head. Aroma was fruity, yeast, straw, and barn yard. Taste is a bit sour with fruit and esters, some wheat bitterness.

Fresh bottle at home. This is a really simple, 4% beer that allows that Hill Farmstead yeast and water combination to really shine through. The base malt is slightly grainy and light, but there’s so much flavor from the yeast esters that it tastes like it’s an 8% beer. Fantastic.

Poured from a bottle into a sample glass: Pours hazy straw with a small white head. Aroma of bread, lemons, pepper, and funky yeast. Taste more of the same, very light, lightly tart, really drinkable but not the best griz I’ve had.

Pours a murky golden with 2 finger head that quickly dissipated and leaves no lacing. At one of malt, apricot, peach, funk . Mildly sweet up front then mild butter. Low booze. Incredibly drinkable. Soft carbonation. Light on the palate. Medium Brett finish

750mL bottled 6/12/15, drunk 6/3/16, thanks to Nelson.
Burnished copper with a strong rusty-iron hue. Good clarity and an off-white head atop that is large and slowly recedes to cover.
Light souring agents in the nose mix with very strong minerals, plenty of hay, and fresh wheat-like cereal notes. As usual, the house character is charming and with warming, a moderate fruitiness emerges, full of cherry, apple and strawberry, that lightens the otherwise somewhat austere wheat and bacteria/brett characteristics (austere but still enjoyable and highly aromatic). A lot going on here for only 4% but not messy/overdone in the least.
Soft, nearly slick at times, texture shows very well-attenuated malts, light wheat and fine carbonation. Tart, I wouldn’t say sour, with strawberry and light cherry skin-like fruitiness adding vibrancy. Light honey, baguette and vanilla notes add complexity, from the malt/wheat and it ends with just a bit of peppery phenol. No alcohol, of course, and no flaw. Maybe just a bit too much tartness and strong fruitiness with the specialty malt characteristics not providing enough softness. Maybe not the best version to age, as more base malt sweetness and less bacterial/brett character might actually be preferable here. Still one of the better grisettes I’ve had, and fun to try it with a year of age.

[5/12/16] Draught at Warpigs in Copenhagen. Clear golden. Aroma is funky, floral, peppery, fruity, with some vinegar. Tart flavor, funky, fresh fruits, vinegar, a peppery note, earth, and a bitterish finish. Medium-bodied. Really good and refreshing.

Draught @ Hill Farmstead Day - Warpigs Brewpub, København
Pours clear deep golden with a small off-white head. Aroma has notes of malt, citrus, yeast, funk, brett, mango and grapefruit. Taste is medium sweet and light bitter with a long funky, grape, yeasty and citrus finish. Body is medium, texture is oily, carbonation is soft.
