Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

One of Hill Farmstead’s flagship farmhouse ales, the dark one in this case, at Hopishop. Thickly papery lacing, snow white, moussy head, very dark chestnut brown robe with mahogany hue, hazy - obviously much darker than the average present-day saison, though I’d like to point at Silly Saison to draw attention to the fact that a traditional farmhouse ale should not necessarily be blonde. Aroma of roses, caramel, maracuja yoghurt, blackcurrant, strawberry, moldy hazelnut shells, toasted bread, pear, red wine vinegar, damp hay. Crisp, fruity onset, tart hints of redcurrant, passion fruit and blackberries, light fig-like sweetness as well, sherry vinegar-like sourishness grows in the course of the palate and effectuates a drying effect, smooth mouthfeel, caramelly and lightly toasty malt core, earthy finish with lingering fruit esters and some balancing herbal hop bitterishness. As said, dark saisons are less a stretch of the style as they may seem at first sight - also considering the fact that ’saison’ was never a well-defined beer category simply since it long predates the need to categorize beer styles. This one is - of only very few attempts at the concept of ’dark saison’ I had so far - the most interesting one in that respect for me, combining the typical nutty and toasted darker malt properties with the funkiness, ’ruralness’ and ’esteriness’ of a saison. I also like the soft, fluffy mouthfeel which seems to recur in all of Hill Farmstead’s saison-like ales.

At Hopishop 2016. Aroma of tart, brett and red fruit. Taste has soft yeast, mild funk and some fruit. Bit boring, just solid.

Clear dark red brown color with a small to average, frothy, good to fair lacing, mostly lasting to diminishing, off-white head. Aroma is moderate malty, roasted, burnt, dark malt, wood, tart, light brett - funky. Flavor is moderate sweet and acidic with a average to long duration, tart, wood, dark malt, dry, brett - funk. Body is medium, texture is oily to watery, carbonation is soft. [20160512]

Bottle at Premature Blue Balls with Andre 160729. Murky brown beer with a rich beige head. Perfume aroma, yeasty, berry notes, chocolate, some nuts, tart notes, hay, some fruits. Yeasty fruity flavor, hay, citrus, floral notes, herbal, chocolate notes, some perfume. Tart fruity finish with hay, raisins and floral notes. A bit all over the place.

On tap at Warpigs. Dark brown with off white head. Aroma is fruity, sour, spicy, caramel, burnt sugar and slight yeast. Taste is similar, darker fruit notes, bready caramel malt, yeast, slight brett and slight spice.

750mL bottled November 2014, drunk 6/3/16 with Nelson.
Dark mahogany with some milk chocolate hues and a strong clarity. Light beige head atop is small and shows moderate to moderately strong retention.
Hazelnut, milk chocolate, prune and berry notes and a touch of honey-vanilla show a nice interplay of base malt, dark malt and light souring agents. It smells quite similar to CD16, though much less bacterial/woody, obviously. It’s very mellow and there’s no heavy roastiness to it that often ruins this "style". No alcohol or flaw, plenty of charm to the house character with good minerality.
Honey and chocolate show a nice marriage of roasted barley and pale malt with little/no roast character and only a lovely chocolate character remaining that mixes with the mild lactic notes to produce a milk chocolate flavor. Very light bread adds some structure and there’s more of the tartness found in their farmhouse ales that perfectly balances the sweetness. Soft, creamy texture with tight carbonation and no alcohol or flaw. I swear if you closed your eyes and tasted this blind, you almost wouldn’t guess it was terribly dark. Which is great because I usually find too much overbearing dark malt/barley character in dark saisons, which interrupts the delicate nature of the beer. Not here. One of the best, if not the best, in style.

Dégustée en compagnie des trois amigos. Une bière à mon avis à cheval entre les styles saison et brown sour. Liquide foncé, peu mousseux et translucide. Subtile torréfaction se mêlant très bien aux levures sauvages, de ferme et de foin. C’est simple mais très plaisant et bien exécuté. En bouche, le malt grillé joue parfaitement son rôle de soutenance aux aspects fermiers de la bière. Une douce amertume de café froid et de gazon fraîchement coupé en fin de bouche. Pas magistral, rien de compliqué, simplement bien fait.

Bottle thanks to northernbrews. Aroma is hard to explain. Mildly sour black cherry and black raspberry, earth, and dark bread. Tastes dry and mildly sour. Black cherry skins and earth. Pretty good but I would want more than a small pour of this.
