COMMERCIAL DESCRIPTION
Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

Bottle dated 3/28/13. Dark brown, almost black. Beige head. Aroma is slight tart Granny Smith apples. Taste is very light, slight sour and tart. Some malty dark fruit on the back end. Very drinkable, a little boring, but still good.

Bottle into HF glass. Aroma is of roasted malt and HF yeast. The roasted malt adds some lovely complexity to this tart, lightly dry saison. Smooth, almost creamy, beer at the start, with more body than the other HF saisons I’ve had. Like the balance among the flavors. Lasting, dry finish. Really glad I’ll be able to enjoy some more of these this winter.

Bouteille 750ml, 2014. Carbonatation moyenne, corps moyen, texture propre à Hill Farmstead. Bien intéressant!

Taste: bit sour, fruity, floral touch, more sourish, tannins, bit weird. Aftertaste: weird, soapy, unpleasant bitterness, grape peel, tannins.
