Bottle, many thanks to Leighton! It pours cloudy darkest brown with a massive light tan head. The nose is earth, toast, caramel, candy, spice, light charcoal, copper and mild sourness. The taste is sour, tangy berry, roasted malt, charcoal, toast, tart granny smith apple, lemon, mustiness, light alcohol and vinous notes with a dry finish. Medium body, moderate carbonation and foamy mouth-feel. Not quite what I was expecting, but pretty tasty nonetheless.

Bottle shared at RBAG 2013. Muddy brown with golden highlights topped by a frothy off-white head. The aroma is very unique and hard to accurately pin down. It is certainly sweet and funky and spicy, but the sum of its parts is very beguiling. Maybe some blueberry, sour orange, light sarsaparilla, light roast. The palate delivers the same combination of tart, funky, and spicy with vinous and woody elements, roasty undertones, and a stemmy bitterness in the finish. One of the most interesting beers I’ve had in quite a while.

Bottle shared at RBAG 2013, thanks to slovak for sending me this! . Dark brown/black pour, with a pinch of tan head. Fair bit of sourness and funk on the nose, a touch of roasted malts (its there but only a little), it actually kind of smells like black wine gums for you candy freaks out there. Taste is sourish lemon up front, towards the middle is black currants, and there is a little bit of roasted malts on the finish. A very interesting beer, not an easy one to place but enjoyable.

From the bottle at RBAG 2013. Dark brown colour, near opaque. Small tan head with good looking creamy edges. Light funk on the nose, brett, raisins and some fruity notes. Taste has lemon notes, raisin and currants. End had dark malts approaching roastiness, lemony and sour notes that really come out as it warms. Interesting beer overall, but not sure I am sold on dark saisons just yet.

Bottle at Monmouth Park tasting. Pours black with tan head. Nose and taste of farmhouse funk, sour funk, wild yeast, citrus and orange zest, cocoa and grass. Medium body.

UPDATED: NOV 15, 2013 Bottle - Raisin, cherry and yeast. Jet brown and a brown head. Currants and a sourness with some dark malts. Complex and difficult to describe.

5/30/13. 750mL bottle thanks to cheesemoose! Almost black pour, more of a deep brown, with a surprisingly small tan head. The aroma shows Brett, sour, funk, and light fruitiness. The flavor has light roast, tartness, funkiness, and a hint of minerals. Very nice.

Bottle shared by GT. Black pour with a tan head. Big herbal and pine aroma. Citrus zest, blueberry, roasted malt, grass, and some smoke. The flavor is quite dry. Tons of roasted malt, some herbs, smoke, and pine. Citrus zest, blueberry skin, and grass.A bit bitter on the finish.

750mL thanks to a trade on BA. Pours a deeper brown than expected looking black in the glass with medium latte foam. Good retention and lacing. Nose as it opens up really is fantastic with truffle salt and smoke in the background of something simpler: lemon, dusty yeast, tootsie roll, cranberry. Taste is disappointing...it really never steps out of a dusty, void body that brings mild tootsie roll and dark bread. The palate has an odd paperiness that leaves me dumbfounded. I did have a similar experience with Civil Disobedience #4, so maybe my palate and HFS black saisons aren’t melding well.

Craft Clerkenwell Tasting. Thanks as always to Leighton for keeping us in Hill Farmstead. Opaque dark brown - red beer. Palate is light, dry and slightly crisp. Touch of cherry fruit with light malt cream and a little yeast bitterness. Dry finish. Fine, if a bit dry.
