COMMERCIAL DESCRIPTION
Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

Bottle via and shared with oakbluff. Near black in colour with strong carbonation. Aromas are of tart red berries, leather, herbs, and milk chocolate. Very complex flavor profile with elements of sour cherry, juicy pink grapefruit, milk chocolate, peppery herbs, and dry malts. Very mellow (almost slick) on the palate, but balanced by the carbonation and funk. A strange beast. Difficult to rate, but tasty.

Cloudy dark brown with a small tan head, some lacing. Aroma is tart and dark malts. Taste is tart, roasty and chocolate

Big thanks to whomever brought this to WTWBA. Pours dark brown fine two finger head. Nose is cocoa powder and some barnyard. Tastes of cola, chocolate, berry, grass, barnyard fink. Dry palate delicious.

Bottle from SlovakSniper. Roasty chocolate and sour cherry aroma. Very sour cherry taste, roasty, chocolate, slight spice. Smooth mouthfeel. Very nice. Thanks, Pat!

29 May 2015, bottle. Dark brown. Nose is dark malt and chocolate cake. Thin body and mildly fizzy. Noticeably tart, some dark malt, faintly funky. Nice.

UPDATED: MAY 24, 2015 Embouteillée 11/2014. Robe d’un noir opaque. Fin col de mousse qui disparrait rapidement. Dentelle inexistante. Le liquide semble bien mince. Arômes de levures sauvages surettes, malt rôti, pain grillé, léger côté fruité venant des bretts. En bouche, goût suret qui laisse dévoiler des saveurs de malt torréfié et de chocolat noir. Les bretts sont bien présentes, elles qui mettent de l’avant des fruits comme la pomme verte et baies rouges. Le goût devient plus amer à mesure que le côté suret s’épanouit. On percoit également des effluves de café mais qui restent discrètes. La texture est mince, bel équilibre et transition des saveurs bien soutenue. Finale brève et chocolatée, mais qui respecte le style au niveau des sensation sur le palais. Pas la meilleure offrande de HF mais qui reste originale.

Bottle thanks to douglas88. Pulling out all kinds of nice brews to share with me tonight -- way too generous! Dark cola brown pour, khaki head dissipates to a ring, leaving behind spotty irregular lacing. Aroma: really nice roasted character; not expecting that from a saison, dark or otherwise. Chocolate, malty. Roasty; chalky, husky. Somewhat tart and surprisingly bitter at times. Coffee grounds here at the end too. Hard to pin this as a saison, honestly, but I guess it’s hard to pin it as anything else. If I didn’t know I was supposed to like this, I could see it being +/- a half point based on preconceptions. But I digress -- cool beer, challenging, not really quaffable and would be hard to drink more than a glass, but glad to have had this.

Bottle. Pours a dark brown color with a beige head. A big malty chocolate nose. The flavor is sour, chocolate, ash, grainy sourness. The roast mixes well with the sourness.
