COMMERCIAL DESCRIPTION
Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

dark with puffy coffee head, large spotty lacing. Nose is lemon, sickly bile, cobweb and light cotton. Flavor aggressively citric, lightest of malt but no madrugada: overly sour and thin, carbonation so confusing.

Brownish, red color with a medium sized, light tan head that left nice lacing on the glass. Aroma of spices, light roast, yeast, grassy hops, light cocoa, and some brett. Taste of roast, some dark fruits, spices, pepper, cocoa, and a dry finish.

750ml bottle shared at rb day at the track. Poured a nice dark brown with an average sized foamy beige head. Aroma of light pepper, yeast, spice, some chocolate and band aid. The flavor is way more sour than the aroma, notes of lemon, sour cherry and funkiness. Medium to fuller bodied for a saison, average to stronger carbonation and a lingering after taste.

Appearance : Deep black with small white head.
Aroma : Light saison yeast, light brett, light roasted malt. Light acidity. Light but complex nose overall.
Taste : Roasted malt with light acidity. Light saison yeast. Finish light saison yeast with some brett.
Palate : Carbonation is a bit high. Body is a bit thin but nothing out of bounds for a brett beer.
Overall : Nice, interesting. A bit light overall but that’s not necessarily a bad thing. Fairly drinkable with layers of complexity. Good but not great.

750 ml bottle shared by alexsdad06- thanks again, Brad! Pours a cola brown with a medium beige head that settles unevenly. Aroma of plum and other dark fruits, grassy and earthy hops, farmhouse funk, and a deep floral character throughout. Flavor of the same floral notes, funk, berries and plums, toasted malts, and earth. Light-medium bodied, with a funky, tart mouthfeel and medium carbonation. I normally do not favor dark saisons, especially compared with lighter ones, but this really worked well.

750 ml bottle shared at b3shine’s. Pours a darker brown to black with a beige head that has good retention. Smells slightly tart and musty. Earthy malt profile. Tastes sweet initially, but moves to sour quickly. Not quite my thing.

750 ml bottle to snifter. Looks good; a murky dark brown with light beith lacing. Smells of yeast, spice, and dark malt. Tastes like it smells, only better and more robust, with a nice, lively mouthfeel. Good beer!

Bottle, many thanks to Leighton! It pours cloudy darkest brown with a massive light tan head. The nose is earth, toast, caramel, candy, spice, light charcoal, copper and mild sourness. The taste is sour, tangy berry, roasted malt, charcoal, toast, tart granny smith apple, lemon, mustiness, light alcohol and vinous notes with a dry finish. Medium body, moderate carbonation and foamy mouth-feel. Not quite what I was expecting, but pretty tasty nonetheless.

Bottle shared at RBAG 2013. Muddy brown with golden highlights topped by a frothy off-white head. The aroma is very unique and hard to accurately pin down. It is certainly sweet and funky and spicy, but the sum of its parts is very beguiling. Maybe some blueberry, sour orange, light sarsaparilla, light roast. The palate delivers the same combination of tart, funky, and spicy with vinous and woody elements, roasty undertones, and a stemmy bitterness in the finish. One of the most interesting beers I’ve had in quite a while.

Bottle shared at RBAG 2013, thanks to slovak for sending me this! . Dark brown/black pour, with a pinch of tan head. Fair bit of sourness and funk on the nose, a touch of roasted malts (its there but only a little), it actually kind of smells like black wine gums for you candy freaks out there. Taste is sourish lemon up front, towards the middle is black currants, and there is a little bit of roasted malts on the finish. A very interesting beer, not an easy one to place but enjoyable.
