COMMERCIAL DESCRIPTION
Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

Bottle, enjoyed on two occasions (05/2013 and 09/2013) – reviewed from notes. Thanks to seth_lford for one of these bottles! Aroma is classic Hill Farmstead yeasty funk, leather, roasted malts, grass, prune, light band-aid phenolic note. More of an herbal and earthy character than fruity. Pours deep brown with some red hues and big fluffy tan head that sits onto of the beer for a majority of the glass. Taste is yeasty, leathery, tart cherries, cranberry, dark grape juice, prune sweetness, brett earth and light roast. Body is medium with medium carbonation and a dry chalky finish. Overall a really funky, lightly tart and fruity dark farmhouse beer. The house yeast takes over most of the aroma, but the tart finish leaves plenty of complex fruity notes. Really nice beer.

This one poured a medium brown with a beige head. Aroma was of roast, apple skins and smoke. Flavor was smoke and rusticity. Ok, but a little strange.

Pour is dark with a tan head. Nose is very light, lemon and citrus with a faint roast. Taste is extremely strong lemon, fairly sour and citrusy. There is a faint roast to it. Strong carbonation and a silky body and puckering citric acid. Very bright citrus, so different than what I thought.

(750ml bottle) dark and lasting tan soda-like head. Nose of cranberry, Vermont funk, very light roast, taste has more tartness, cranberry, light roast. Neat and complex but a tinge metallic too.

Bottle. Very dark brown pour, thick lacing on the side and a little carbonation with an aroma of green apples. Flavor is light lemons, dry and light on the finish.

Bottle. Pours a hazy brown color with white head. Thanks to matsciguy for sharing. Light roasty, tangy, tart flavors. Alright, but I?ve liked other Hill Farmsteads.

Bottle with matsciguy at Armine’s. Darkish brown with a tan head that has some staying power. Funky aroma with a hint of roasted malt that I also get on the tongue. Dry and finishes with a bit of tartness

Bottle @ Armin’s house, courtesy of mattsciguy. Thanks! Pours a deep brown appearance with a light brown head. Somewhat minty / herbal, slightly roasty, chocolate, kind if juicy, pretty aroma. Twangy, lime, pineapple, tart fruity, somewhat roasty flavor. Strange but quite tasty.
