COMMERCIAL DESCRIPTION
Edith (1897-1992) was our grandfatherís sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

In short: A dark ale with a strong farmhouse character and mild tartness/sourness. Good beer by Dark Saison standards.
How: A few bottles, 750ml, from very fresh to a few months of age, seems to be developing tartness.
The look: Black body topped by a medium tan head with medium retention.
In long: Nose has a strong farmhouse character (almost barnyard) along with some roast, earth and notes of molasses. In mouth the beer has a slender body with a medium carbonation, this beer lacks the spot-on lively mouthfeel I usually get from HF Saisons. Taste is hard to pigeonhole. There is some dark stuff like some kind of molasses-based syrup. A farmhouse character that goes leathery/barnyard. Fruity notes of dark prunes and others. Strong earthy notes. A citric tartness and a mild sourness. A very good attenuation. A good beer, better than most dark Saisons out there, but I prefer pale Saisons, especially those by HF. If you have some bottles of this beer then maybe you should consider "grooming" them if you know what I mean, and I hope you know what I mean because I donít, I really donít

2013-11-15. Very dark brown body and nice small beige head. 3++ Aroma is lovely, with notes of dandelion and whispers of citrus. A light funk comes out as it warms. 7++ Flavour is pleasant, vaguely tart, dandelion and a whisper of fruit, more tartness in the finish. Average plus bodied palate, pleasant carbonation. 3++ Quite drinkable! Lovely stuff. More complexity to it than I am articulating here but it is excellent. Bottle from the brewery cellared approximately six months

2013 Itís dark, etched surface of light tan foam. Smells of funk, some cola, lots of grass (dried) some dark malts, a little light in the nose. The flavor is fucking outstanding. Really sexy. Dark prunes, raisin, leather, sour cherries, a little bit of bicarb, some really nice fungal flavors. Nearly thin with higher carb and a dry, but salivating finish. Man, this is a great beer.

Bottle shared by jerc and mabel - thanks! Deep black pour. The nose is intensely Bretty. Loads of soft tartness and a bit of light fruit and a touch of pepper. There is a bit of light fruit and a touch of soft dark malt and a bit of pepper. Really damn tasty.

Pours a dark, beautifully cloudy color with plenty of off-white head. Chocolatey (?!?) aroma is unexpected to say the least, yet it adds an interesting twist that actually kinda works. Traditionalists will surely cry foul, but fuck the haters: this is pretty cool.

Funky yeast imparts a mild tartness on my tongue until a drive-by of bakerís chocolate leaves my senses tingling. Earthiness looms underneath it all.

Strange, yet delicious; wow. Unique.

Poured into tulip from 750ml bottle: pours black with a thick white head. Smells fruity and tart with a bit of wood. Taste moderately tart, with a leathery not quite roasted flavor. Very full bodied for a saison, finishes a bit bitter... Can definitely taste the Brett at the end. Tasty beer!

750 ml bottle shared with the group. Pours a cola brown with a medium beige head that dissipates to a film. The aroma has dark fruits, plum and hints of berries, floral notes, grassy and earthy hops, and barnyard funk. The flavor is much of the same funk, earth, floral, berries and plums, toasted malts, Medium bodied. This is very clean as is the case with almost every single one of their beers.

Dark, with tons of lasting foamy head. An aroma with a melange of malt, funky farmhouse, chocolate and spice. Thick smooth mouthfeel, so drinkable combination of sweet and sour, funk, hops, chocolate. Unique and wonderful saison, thanks Quebec connection.

Sampled at Pinball. This is quite dark with a beige ring. A funky aroma of wild yeast. The flavor is also wild yeast. Complex fruit. Deep resonate notes. This is a really funky saison.
