Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

Draft. A black beer with a brown head. The aroma has notes of roasted malt and chocolate. The flavor is sweet with notes of brett, malt, and chocolate, leading to a tart finish.

Craft Clerkenwell Tasting. Thanks as always to Leighton for keeping us in Hill Farmstead. Opaque dark brown - red beer. Palate is light, dry and slightly crisp. Touch of cherry fruit with light malt cream and a little yeast bitterness. Dry finish. Fine, if a bit dry.

Bottle shared at CBC Clerkenwell - big thanks to Momma Smith for picking this up and to Sister Nellie for bringing it to London (via Cluj, Romania). Pours rich brown with a thick, frothy beige head; it looks perfect, basically. Lovely leathery funk in the nose, some tangy berries and, as the beer warms, notes of bread come through. Light sweet flavor with a dominant dry leather character, light wood, some dried fruits, good funk, bitter berry pits. Light to medium bodied with average, massaging carbonation; typically stunning HF mouthfeel. Funky finish, lightly dry, with more leathery berries, some bitter lemon rind, faint dry dark bread. Lovely.

Bottle split at CBC tasting, big thanks to Leighton (and Nellie!), 26/06/13. Extremely dark mahogony brown with a good tan covering. Nose is sour/wild yeast, grass, tarte fruit, funk, barnyard. Taste comprises grass, bitter orange, more subdued sour/wild profile when constrasted with the aroma, lemon rind, farmyard, herbal notes, funk. Medium bodied, fine carbonation, dry finish. Decent saison which crosses over a little into the sour/wild bracket.

Bottle shared by GT. Black pour with a tan head. Big herbal and pine aroma. Citrus zest, blueberry, roasted malt, grass, and some smoke. The flavor is quite dry. Tons of roasted malt, some herbs, smoke, and pine. Citrus zest, blueberry skin, and grass.A bit bitter on the finish.
