COMMERCIAL DESCRIPTION
Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

750ml crown-capped shared with blankboy and GregClow, via JerCraigs. Almost opaque ruby-black pour, huge fluffy lasting tan head - lovely, 4+. Sharply dry aroma, dry floral bitterness, sharp dry yeast, light fruit - very bretty, lightly roasty; nice stuff! Taste - oh man that’s good - medium-hoppy (dry resin), light roast, slightly vinegar tartness, enough brett to compete - some alcohol; frickin’ great stuff. Decent body, astringent, lightly carbonated but quite airy, delicately funky, longish dry floral/brett finish. So good.

Bottle, thanks Jeremy. Black with tan head. Dusty brett aroma. Taste of fruity brett, touch of molasses. Dry with a crisp, lightly sour finish. Pretty much a brett party, not much else going on. Nice

Pours a darker brown color with tan head. Funk, oak, dark fruits, and some spice on the nose; follows onto the palate. Finishes with some dark fruit notes.

750ml bottle shared thanks to Mike, opens with a small gush and pours dark brown with light edges and 2 finger mocha head. Nose is tart dark berries, cherry, some chocolate, dark breads. Taste is subte chocolate, dark grains, tart berry, earthy soil. Finish is tart earthy bitter cocoa and occasional semi-sweet fruit and berry notes. Nice stuff.

Bottle, picked up at HF a year ago and carefully stored since. Pours deep murky chestnut with a medium tan head and nice lacing. Aroma is funky and not much else, Flavor is funky, fruity, a bit of lemon zest. Not much sweetness or bitterness, a bit of acidity. Does not drink like a dark saison for sure. Medium body, spritzy carbonation. Lovely as hell and highly drinkable. Pulls things back to their core and displays only what is necessary. Not complex by any means, but the notes it hits are all pitch perfect.

Received via trade. Served in a Hill Farmstead wine glass. Shared with Paul. The beer is dark mahogany with a thick, khaki head. The aroma is enticing, with scents of oak, funk, dark fruits, spice. Flavors include red wine, oak tannins, brett, yeast, raisins, plums. Wonderfully complex and fabulous. No surprise there, as Hill Farmstead "keeps comin’ up with funky ass shit like every single day" ...Old school reference. Anyhow...I thoroughly enjoyed this. I’m not usually as much of a fan of the darker saisons and wilds, but Edith was a lovely beer. Recommended fo sho.

Bottle received in trade. Thank you bytemesis! Pours hazy reddish black with a huge frothy blackish beige head that leaves tons of sticky trace and lacing on the glass. Smell is malty, funky, tannic and tiny spicy with roasted malts, dark bread, barnyard, lemon juice, hay, dry soil, black pepper corns, moist wood, dried juniper berries, burnt caramel. Taste is sour, tiny bitter, funky and tannic with roasted malts, liquorice root, grape juice, moist wood, hay, dry soil, lemon juice, leather, barnyard, dark roast coffee, juniper berries, oxidized red wine and hints of caramel and pumpernickel bread. Mouthfeel is soft, dry, tart and light to medium bodied. Finish is sour and tannic with roasted malts, lemon juice, grape juice, hay, dry soil, barnyard, leather, red currants, dried juniper berries, pumpernickel bread and lemon zest. Very nice tannic and complex dark saison.

(Bottle) dark brown to black with a nougat coloured head. The aroma holds bready malt, bright funk, spicy oak, juniper berries and notes of Swedish julmust. The flavour is dry, light bitter and light to medium acidic with funk, juniper berries, light oak and bready malt. The mouthfeel is fairly tight and light tart with a medium carbonation. Near medium bodied.

Bottle courtesy of "hannont". Colour...dark brown with a thick tan head. Nose...acetic, with dark fruits and over ripe raisins. Palate...tangy, frothy and quite tart with steeped plums and crushed old cherries. The mid palate is tangy and semi-soapy but the fruit takes over on the lengthy finish.
