Edith (1897-1992) was our grandfatherís sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

750ml crown-capped shared with blankboy and GregClow, via JerCraigs. Almost opaque ruby-black pour, huge fluffy lasting tan head - lovely, 4+. Sharply dry aroma, dry floral bitterness, sharp dry yeast, light fruit - very bretty, lightly roasty; nice stuff! Taste - oh man thatís good - medium-hoppy (dry resin), light roast, slightly vinegar tartness, enough brett to compete - some alcohol; frickiní great stuff. Decent body, astringent, lightly carbonated but quite airy, delicately funky, longish dry floral/brett finish. So good.

Draft at HF. Pours a medium brownish burnt red color with a tan head. Aroma is acetic, soured dark malts. Flavor has a decent vinegar kick to it. Not a bad welcoming gift for waiting in line in 35F weather!

750 mL bottle. Originally reviewed 5/13/2013. Nearly black. Slight transparency. Huge khaki head. Great collar and nice surface foam. Smells of chocolate malt. Sharp acidic character. Bretty. Not a ton else going on. Taste has even more brett. Lots of acidic flavors, without being that sour until the finish. Chocolate malt blends in and is almost completely disguised. Again, not a lot else going on. Itís light and well carbonated. Nice sharp acidity. Itís definitely not Hill Farmsteadís best saison. Itís pretty tasty, but overpowered by brett.

Sampled at The brewery. Not sure if same batch as of 2013 or not. Aroma: red fruits and that typical Hill Farmstead wild yeast. App: dark brown, small brown head, nice lacing. Taste and palate: light to medium body, fizzy, dry acidity finish. Overall: taster at the bottle entrance, nice welcoming gift! Great aroma, tasty and good palate.

Bottle shared at a tasting. Pours dark brown to light black with a small filmic light grey head. Interesting aroma as it combines the typical peppery character of American saisons, and citrusy hops as well as some sour lactic notes. Medium body with quite some bitterness. Taste is light roasted malts, resinous hops and citrus peel.

Bottle from trade, bottled 2013. Pours a petty dark brown, almost black. Tan head. Aromas of that signature HF yeast. Lightly toasty despite the appearance. Kind of funky, bretty, sweaty. I really dig the beer.

Bottle via and shared with oakbluff. Near black in colour with strong carbonation. Aromas are of tart red berries, leather, herbs, and milk chocolate. Very complex flavor profile with elements of sour cherry, juicy pink grapefruit, milk chocolate, peppery herbs, and dry malts. Very mellow (almost slick) on the palate, but balanced by the carbonation and funk. A strange beast. Difficult to rate, but tasty.
