COMMERCIAL DESCRIPTION
Ephraim (1823-1913) was our great-great grandfather; Hill Farmstead Brewery resides several hundred feet downhill from the land that he and his father settled. In his honor, this Imperial India Pale Ale is dutifully crafted from American malted barley, buckets of American hops, our ale yeast and water from our well. It is unfiltered, naturally carbonated, and double dry hopped. Intensely aromatic and saturated with resinous hop flavor, this is the ale that I dream to have shared with Ephraim. 10.3%, 21ºP, 280 Theoretical ibus. Ingredients: Pale Malt; Dextrose; Centennial, Chinook, Columbus, Simcoe, and Warrior hops, Ale Yeast, and our Well Water.

On draft pour at the farmhouse in burlington. Nice orangish color with a nice thick white head. Well balanced and smooth for such a strong beer. Nice bitterness.

UPDATED: MAY 18, 2013 Growler 750mL. Jaune paille trouble avec belle mousse blanche. Nez tropical sur une dominance de kumquats. Bouche de tangerines bien mures avec une finale de pin et une amertume persistante doublée d’une finale chaude qui révèle la haute teneur en alcool. Le corps tapisse la bouche de façon quasi-visqueuse et possède un caractère asséchant qui stimule la sécrétion de salive. Excellente.

On tap at the brewery. Pours cloudy golden with a lacy, off-white head. Aroma of strong, citrusy, floral, piney hops with a nice light maltiness that balances the hops well. Flavor the same with a great hoppy profile. Smooth texture. Incredible.

Pours golden with nice head. Aroma is sweet and hoppy. Flavor is nice pine with hints of caramel. Hints of citrus poke through make this quite a treat. Another wonderful HF brew.

Pour is hazy bright golden amber with tons of egg white head leaving a thick lacing. The nose is pungent, light clean grain, dusty, strong tropical fruits, mango and grapefruit behind. Taste also has nice balance with huge hop punch. The grain is up front, clean and lightly dusty. Hops surround with a creamy dough and more tropical fruit. Plenty of mango and fuzzy peach with a grapefruit hit in back and crisp bitterness with little lingering effect. Body is light, a touch creamy mid palate, softer carbonation in the finish.

On tap at Gingerman prior to going to Joe’s going away party. Pours a lightly hazed orange with a medium sized white head. A touch of alcohol hides gracefully behind the huge citrus and thick pine notes on the nose. Lightly sweet, sticky citrus and hop flavors. Big hop candies, ridiculously sticky resinous character. Big candied grapefruit and loads of slow lingering quinine on the finish. Awesome stuff. First beer in quite a while that I’ve ordered a second of at a bar. Would have gladly sat around all day drinking this but had to go to a crazy tasting so I reluctantly stopped at two.

Thanks to Kan for this handbottle. Pours an orange amber with a thin head. Super fresh nose: fresh hops citrus and dough. Super fresh hop notes with the doughy sweetness is the sign of an excellent IIPA. Bitter citrus dough flavors lots of bitter bitter hops. Lots of citrus pine and super solid. Super bitter but excellent with that doughy malt. Love it. 9/4/8/4/17

From tap at the brewery. Pours almost clear golden orange with a small white head. Aroma is grapefruity and slight peachy smooth hoppy. Dry. Smooth and lingering fruity hoppy with a touch of alcohol. Ultra clean and bitter fruity finish.

Growler pours a transparent, bright orange with some spitty white head. Great color, OK head retention. Nose is dank hops, resinous, peachy, candied orange, oily American hops, grapefruit zest, vinous fruit, honey, flower pollen. Flavor is strong pine, sweet, honey, grapefruit, orange zest, lemons, some corn sugar, a touch peppery, nectarine. Full bodied, touch hot with some bracing bitterness. Very nice. Could probably use a touch less bitterness and a little more sweetness to round things out.
