COMMERCIAL DESCRIPTION
Everett (1908-1939) was our grandfather’s brother; Hill Farmstead Brewery rests upon the land that was once home to him and his 13 siblings. In his honor, this Porter is crafted from American malted barley, English and German roasted malts, American hops, our ale yeast, and water from our well. It is unfiltered and naturally carbonated. Decadent in its depth, with a complex backbone of chocolate, coffee, and malty sweetness, this is the ale that I dream to have shared with Everett. 7.5% ALC/VOL 21º P Ingredients: Pale, Caramel, and Chocolate Malt, Roasted Barley, Columbus hops; Ale Yeast, and our Well Water.

Huge thanks to Eric (Holland) for giving me this as an extra(!!). 500 ml bottle served in a CBS snifter. A: Pours a solid black color with a brown head forming on the pour. It recedes to a thin cap and collar that leaves some nice sticky, soapy lace down the glass. S: Roasted malts and coffee beans up front. Some light bakers chocolate and some toffee. T: The taste is transcendent. Milk chocolate, nice roasted malts and some chocolate covered espresso beans all fill my mouth and run across my taste buds. Delicious vanilla sweetness with a light toffee richness to it. The finish is a little bitter bakers chocolate, a hint of burnt sugar and some light molasses as well. M: Creamy mouthfeel with a medium body. Medium low carbonation with a nice combination of roast and sweet notes on the finish with just a hint of dryness. The drinkability is off the charts. O: This is an incredibly decadent treat. Rich and creamy with great notes of roast, chocolate and espresso. This is the best porter money can buy. I will be seeking this out again, and very soon. When you think of Hill Farmstead, you probably think of IPAs and saisons, but they do make a wide variety of styles including porter. This is my first dark beer from this highly sought-after brewery and it’s definitely an excellent example of the style. Robust palette with a body that’s as nice on the eyes as it is on the tongue.

I poured a 500ml bottle into a tulip glass. It was bottled on 8/14/15 and cost $8.50 ($0.50 per ounce). Thanks to Jon H. for the bottle!

Appearance: One of the darkest porters I’ve seen with a jet black, opaque hue with just a hint of brown highlights. Pours to a large, dark tan frothy head which retains and laces extremely well.

Smell: Plenty of dark malt, though not roasty or chocolaty per se. Fairly sweet scent all around with a trace of pine.

Taste: There’s a fine line between a strong robust porter and a stout and Everett seems to straddle that line pretty firmly. I don’t get the lighter fruity sweetness here that’s typical of a porter, but more of a deeply bitter roasty sensation usually associated with stouts. Not that I’m complaining, but the flavors that are present are plenty delectable. Sweet dark malty flavor is the first component, followed by a resiny/piney sensation from the hops. Not especially bitter, though there is a dry, coffee and burnt toast-like taste on the finish. A residual earthy aftertaste completes and complements the palette perfectly.

Drinkability: Hill Farmstead Everett is not only a great-tasting beer, it’s also a pleasure to drink. The mouthfeel is very silky and smooth, though it does feel just a tad thin. For a 7.2% ABV brew, there is no alcohol presence whatsoever; which makes it almost dangerously drinkable. Even the aftertaste is good, if a bit astringent but easily tolerable.

750 ml growler shared with Alex and Seb A: chocolate, tobacco, light roastiness, light caramel. App: pitch black minimal beige head. T/p: med to full body with moderate long bitter finish. O: A great complexity with nice overall smoothness. Been a while since I had such a balanced porter.

UPDATED: AUG 22, 2015 750ml 1 week fresh growler from the brewery shared with Jo and Seb. Aroma: rosted malt, chocolate, wood, tobacco. App: dark brown, even burgundy, small brown head. Taste and palate: full body, creamy, average carbonation, smooth, medium bitter finish. Overall: great. Really smooth. Enjoyed the bitter finish. Will sure buy again

Liquide bien foncé qui génère une mini mousse dorée et très crémeuse. On sent le caramel, les noisettes et le café. En bouche l’impression est bien ronde, on dirait prèsqu’un sirop, à cette légère différence qu’une bouteille de sirop ne me donne pas envie de la boire en entier! Les bières foncées et/ou sucrées ne sont pas celles que je préfère, mais j’apprécie toujours, malgré tout, lorsque la bière est bien brassée. Et c’est clairement le cas ici. Hill Farmstead rate rarement sa cible... Une bière parfaite pour les amateurs du style!

Bottle. Pours pitch black with a big dark brown head. Aromas of dark roast, bitter chocolate, caramel, dust, malts, light smokiness, dark fruits. Taste is dark chocolate, roast, caramel, tobacco, liceorice, light smokiness, dry wood, dark sweet fruits. Damn classy smooth porter!

UPDATED: AUG 18, 2015 Well-traveled 500ml, bottled 06/2013, courtesy of Chicago RB posse 2013, shared@Aarhus Belgisk Blåmuslinger Tasting 08/2015. - subtly layered Robust American Porter that gradually opens up to its well-hopped potential under a rich dry layer of young tobacco leaf and chocolate espresso roast. - First whiffs of thick espresso and toasted wood gave way to fruitier, but still earthy red berry, currant, red grapes, tobacco, mildly roasted cocoa bean. Dry roast also defines its dry mouthfeel and taste, with more chocolate, woody notes and liquorice developing at repeated sipping. Restrained caramel sweetness, maybe thinned out with age. Highly drinkable as well. - Personally prefer my Porter a tad more luscious in creamy mouthfeel, Fuller’s style, but the semi-heavy, fresh cocoa bean dry roast here remains well balanced and lively with subtle hop watercolours, even aged 2 years.

A: Coffee, chocolate, liqourice T: Follows nose very well. Starts off with a light sweetness, a bit tart afterwards and ends with a bitterness.

Dark brown pour dark brown head. Aroma char. Tastes molasses sweet char. Very light body. Flavor that is pugnacious and keeps coming.
