Fear and Trembling is Hill Farmstead’s first collaboration - a Baltic Porter brewed with malt that was hand smoked over maple wood by our Danish friend, and former colleague, Anders Kissmeyer. This bottled version was aged in Bourbon barrels. As a student of philosophy and former resident of Copenhagen, it is fitting that our brewer named our first collaboration after Denmark’s great thinker: Søren Kierkegaard. All three contemplated absurdity, faith, and salvation while wandering the shores of the Baltic Sea... Unclear dark black brown color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, roasted, chocolate malt, sweet malt, light smoke and bacon - meat. Flavor is heavy sweet and modrate to heavy bitter with a long duration, sweet roasted malt, light smoke and alcohol - bourbon. Body is medium, texture is oily, carbonation is soft, finish feel is light alcoholic. [20101102]

50 cL bottle, courtesy of BearsOnAcid. Pours dark brown to black with a small tan head. Aroma is smoked and dark roasted malty. Smoked and ham aroma. Thick malty and dark roasted. Alcoholish note, bourbon. Dark malty and heavy roasted malt. Liqourice and dark chocolate. Lingering dark malty into a mild fruity finish.

Bottled. A black beer with a red shine under a lazing tan head. The aroma has strong notes of smoke as well as medium notes of bacon and roasted malt. The flavor is sweet witih strong notes of smoke from beech wood, combined with medium notes of bacon, roasted malt, and alcohol, leading to a dry roasted finish. The alcohol tickles the tongue and palate. Thanks yespr for sharing.

Bottle 50 cl. Courtesy of yespr. Pours pitch black with a rough beige head. Fat Bamberg smoke in the nose combined with sweet roast. Medium body, a little low in carbonation, sweet hard roast malts and vanilla. Some barrel feelunderneath. Hardly any bitterness. 021110

Bottle at Papsø, thanks Jesper. Clear dark brown coloured with a medium sized beige head. Roasted flavour of smoke and bacon with notes of caramel and oak. Sweet and roasted flavour of caramel and dark chocolate with notes of bacon and smoke. Roasted and smoked finish.

Bottle courtesy of Owen, thank you sir! This had a bit less smoke and a bit less chocolate than the cabernet version, and the bourbon was pretty subtle. Tasty.

Bottle in NH - massive thanks to Wally for sharing. Pours clear, black-brown with a creamy, tan head. Gorgeous nose with restrained bourbon, rounded chocolate, hints of vanilla and smoke. Medium to big sweet flavor with strong smoke, mellow bourbon, ham, faint minerals, a bit of honey and caramel. Full bodied with fine, chewy carbonation. Robust smoke in the finish, with faint warmth, nice cured ham, background cocoa. Superb balance here. Exquisite beer.

A: The beer pours a very dark brown color with a finger or so of tan colored foam. S: As expected, there is a heavy dose of smoke. Although this is a Utopia’s barrel, there is still a fair amount of barrel/oak character to it. As with many smoked beers, I get some aromas of almonds and an almost meaty aroma and light saltiness. T: Strangely, this beer has an almost peanut butter flavor to me (perhaps the "salitiness"?). Anyway, there is also a bit of sweet malt (toffee), barrel/oak, and of course: smoke. Though, the smoke is not as powerful as expected. M: The body is medium with low to medium carbonation. O: Quite nice. I preferred this to the Cabernet version.

(500ml bottle, courtesy of thirdeye11) Pours a dark brown body with a spare tan head. Aroma of smoke, roasted malt, caramel, vanilla, and bourbon. Flavor of roasted malt, baking cocoa, bacon, vanilla, and bourbon with a dry finish.

50cl bottle, thanks tarheels86. Clear dark brown body with small beige head. Aroma is moderately sweet, smoke, some bittersweet chocolate, caramel, light vanilla. Taste is moderately sweet, bittersweet chocolate, some smoke, caramel, light vanilla/Bourbon. Smooth medium-full body.
