COMMERCIAL DESCRIPTION
Fear and Trembling was Hill Farmstead’s first collaboration – a Baltic Porter brewed with malt that was hand smoked over maple wood by our Danish friend, and former colleague, Anders Kissmeyer. This version was a rebrew of Batch #4 in our brewery...and was aged for many weeks in stainless steel. As a student of philosophy and former resident of Copenhagen, it is fitting that our brewer named our first collaboration after Denmark’s great thinker: Søren Kierkegaard. All three contemplated absurdity, faith, and salvation while wandering the shores of the Baltic Sea…

From tap. Pours pitch black with a small tan head. Aroma is roasted, dark malty and liqourice. Smooth amoked, dark malty, yarish, liqourice. Lingering dark malty and roasted. Bitter, roasted and lingering dark malty finish.

Draught at Mikkeller Bar. Pitch black colored with a small beige head. Roasted aroma of caramel and chocolate with notes of licorice and dried fruits. Roasted flavor of caramel and dried fruits with notes of chocolate and licorice. Roasted finish.

Draft @ Mikkeller Bar, Copenhagen. Pours a black color with a small tan head. Has a roasted malty licorice and caramel aroma with weak smoky hints. Roasted malty chocolate, licorice and caramel flavor. Has a roasted malty licorice and chocolate finish.

Tasting at Bruce’s pad. Thanks to Leighton. Opaque dark brown beer, good pale tan head. Smooth soft palate, semi dry. Sweetish dark chocolate. Obvious smoke, but smooth and not acrid. Light citrus. Smooth finish.

Bottle shared at Bruce’s in London during Jack’s farewell tasting. Pours rich brown with a fine, creamy tan head. Nice peaty, smokey dark malt aroma, dark bread. Medium sweet flavor, lots of smoke, hints of burnt toast, dry ham, subtle brown sugar. Medium bodied with fine, creamy carbonation. Rounded dark malt finish with plenty more smoke, burnt ham, dark bread, hints of milk chocolate, light earth. Great beer.

Sample at a NYC-tasting at jredmonds place. Deep brown beer with a nice lasting beige head. Roasted cocoa and licorice flavor, peat, dark chocolate, fruity notes, brown sugar, some coffee. Dark chocolate flavor, licorice, peat, soot, coffee, brown sugar, warming alcohol, some figs. Nice complex beer, maybe slightly too much peat.

Bottle shared at Jack’s Farewell Tasting, massive thanks to Leighton for yet another slice of Vermont’s finest, 06/08/13. Very dark mahogony brown with a moderately sized tan head. Nose is roast malts, light smoked gammon, dark toffee. Taste comprises roast malt, light brown sugars, dark fruits, raisens, dark chocolate. Medium bodied with bite, fine carbonation, dry finish. More solid work from HF.

Trade with AdamJackson. Thanks. Cracked at the Pre C4 Pale Ale Festival Odense, 2013. Pours black with a creamy head and lacings. Nose is roast, meat, hops, coffee and chocolate. Flavor is roast, liquorice, smoke and chocolate. Some salty liquorice. Smooth and dry. :-) The guy is a genius!

500mL bottle, sent from Glouglouburp (thanks a lot, Dany), pours black with a small tan head. Aroma of light toasted malt, some chocolate / cocoa, and a bit of smoke. Flavour is very robust, especially for a porter, with a wonderful mix of smoked meat, roasted malt and a bit of chocolate. Full-bodied and with a wonderful balance of flavours. Finishes semi-sweet and smoked meaty. Great stuff, but perhaps not on the samel level of most other HF beers.
