COMMERCIAL DESCRIPTION
Fear and Trembling was Hill Farmstead’s first collaboration – a Baltic Porter brewed with malt that was hand smoked over maple wood by our Danish friend, and former colleague, Anders Kissmeyer. This version was a rebrew of Batch #4 in our brewery...and was aged for many weeks in stainless steel. As a student of philosophy and former resident of Copenhagen, it is fitting that our brewer named our first collaboration after Denmark’s great thinker: Søren Kierkegaard. All three contemplated absurdity, faith, and salvation while wandering the shores of the Baltic Sea…

“continue to work out your salvation with fear and trembling”

Note: This is the 2013 Batch of Fear & Trembling, Stainless Steel Fermentation, Feb ’13.

Bottle shared by Leighton on the bus at RBWG. Another new HF beer and from the dude who now lives across the big pond! I will take it. The base beer for those early baltic porter treatments, I did not realize this beer existed ; so it makes sense that its a new beer as I can see here in the CD. Pours a muddy dark brown with a small yellow tan head, nice lacing as always with HF. Nose is dark chocolate, smoke is there but not overpowering, light roast, coffee. Flavor is similar, more easy drinking and BP-like than a smoke beer which is fine by me (not that i dont like the smoke! I do I do! )

On tap at Hill Farmstead. Nose has a moderate amount of smoke with some nice roast and a hint of chocolate in the background. Beer is flavorful and quite nice, with the smoke not overpowering everything. While i prefer the barrel-aged versions, this turned out quite nicely.

500 ml bottle shared by bsuedekum- thanks a ton, Blake! Pours a deep brown-amber color with a small beige head. Aroma of smoke, wood, (kind of a mellow charcoal character), roasted malts, dust, pork, and some earth. The flavor adds a bit of earthy bitterness to the whole slate of roast and smoke notes. Medium-bodied, with moderate carbonation and a smoky, bitter mouthfeel. Really nice smoked porter.

A mostly still black beer with a short short head. Aroma is a smoky with some burnt malt. Excellent balance of smoke and smooth creamy roasty malt. Another great one. Thanks a lot tommy for sharing!

Bottle thanks to a trade! Pours near black with a brown head that dissipates slowly to the edges. Aroma has a bit of dark grains with a good amount of roast and just a hint of smokiness. Flavor starts with creamy dark grains that are quickly taken over by roasted malts and a bit of smokiness.

Vintage Jan, 2013 It’s near black with a fleeting tan head leaving a etched top. Smells of toasted malts, richly of bitter coffee grounds, some soil, some vinyl and a good chunk of leather. Flavor is very leathery with some meat flavor (well done flank sans spice), some soil - much less sweet than most baltic’s I’ve had. Full bodied with sharp, but limited carb and an off dry finish. Nice beer, not among the best baltics I’ve had, but a yummy beer best suited for a rich Irish/English meat and potatoes style dinner.
