Florence (1915-1967) was our grandfatherís sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Belgian inspired Wheat ale is crafted from American malted barley, Organic Vermont wheat, European and American hops, our distinctive farmhouse yeast and water from our well. It is unfiltered and naturally carbonated. Soft, cloudy, and fresh, this is the ale that I dream to have shared with Florence. 5% ALC/VOL 12ļ P Ingredients: Pale Malt; Vermont Organic Wheat; American and European Hops; Ale Yeast, and our Well Water.

750ml bottle purchased at Hill Farmstead. Pours a bright golden yellow, hazy, nice carbonated bubbles and a thin carbonated head. Smells of fine champagne, white wine, light fruits. You can almost smell the sourness/tartness of the beer. Taste sour, smooth, tart flavor in the back of your mouth. Slight peachy pale fruit flavor. Lovely. Tart and full mouthfeel. Nice linger to it. Very nice.

From notes. Enjoyed at Abuís place on September 13. 750 mL bottle. The pour is a nice clear light golden yellow color with a thick white head and a good bit of lace as it falls down to a thick cap. The aroma is very wheaty up front. There is a light tropical fruit, some barnyard funkiness, and a hint of brett. It comes off a little grassy as well. The flavor is a little better. Light citrus comes in with the wheat, barnyard, fruits, and the brett. The grassiness fades a little, but itís still there and prominent. The mouth feel is light and crisp with a great carbonation and a lingeringly tart dustiness on the finish. Iím not much for the all out wheat character, but itís a nice beer.

Bottle shared at Puzzlís. Poured a delicate super pale yellow with a foamy white head. Aroma of wet wheat, lemon, light spice and urinal pucks. Flavor is better than the aroma with sour lemon, grains, wet wheat and light pepper. Smooth body with light carbonation.

Bottle into a wineglass showing unfiltered dark apricot orange with half a finger of quickly dissipating foam. The nose shows light but apparent notes of apricot, citric orange zest, brett, and subtle malts with an ever present tartness. The palate is light bodied and well carbonated. Clean flavors of light peach and apricot with a mild tartness. A background similar to a white wine barrel aged beer seems to permeate the beer but without the awkward bitterness. Clean fruit notes through to the finish and the linger. Practically no bitterness. Entirety of the beer comes together very well.

Taste is tart, brett, tropical fruit, banana, dry, barnyard, funk, real nice. Mouthfeel is light body, light crisp carbonation, dry, tart barnyard aftertaste. Overall, not as good as Dorothy but still quite solid.

(On tap @ Warpigs HF Day, Copenhagen, May 12 2016) Pours hazy medium gold with a white head. Aroma of lemon zest, orange flesh, floral and a touch grassy hop profile, light grainy wheat and bread notes, a touch of Brett. Flavour is semi-dry and fairly crisp, green apple, slightly tart citrus, floral, dry grass, light to moderate wheat graininess, peppery notes in the dry, subtly tart back end. A touch mineral. Medium bodied, soft carb, refreshing. Very nice saison, probably not flattered by its excellent HF company but refreshing and highly drinkable.
