COMMERCIAL DESCRIPTION
Florence (1915-1967) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Belgian inspired Wheat ale is crafted from American malted barley, Organic Vermont wheat, European and American hops, our distinctive farmhouse yeast and water from our well. It is unfiltered and naturally carbonated. Soft, cloudy, and fresh, this is the ale that I dream to have shared with Florence. 5% ALC/VOL 12º P Ingredients: Pale Malt; Vermont Organic Wheat; American and European Hops; Ale Yeast, and our Well Water.

Pour at HFS Farmhouse Fest. Pours a clean golden color with a finger of tight white foam. Aromas are rustic grain, lemon, floral and grassy. The palate has a bit of strange floral bouquet that is a bit overwhelming but tails of as the grainy rustic yeast profile balances it out. Have had this many times but just getting around to rating it and unfortunately this most recent pour was the least impressive of the bunch... but still a good beer.

Bottle (Dregs)... RBWG 2013… Pours murky and nearly white with a small, fizzy, white head. Decent retention. Herbs, flora and bread dough construct this beer’s bouquet. Medium-bodied with tingly carbonation. The flavor presents an excellent balance of malt, hops and acidity, but it’s quite restrained. Finishes tangy and a touch dry. Too phenolic for my liking.

On tap @ the brewery. Pours a hazy light straw color with a nice fluffy white head. Aroma is floral, light citrus, and hay. Taste is similar. Fruity, some yeasty funkiness, hay, and light citrus.

Very pale cloudy, almost murky yellow pour from a 750 ml growler and topped by a small white head when poured directly in the center. Highly rustic nose with spelt-like wheatiness that is fresh, cracker-like and a nice fit to the spicy, gently doughy and minimally bubblegummy yeastiness. Hay-like fresh cereals are quickly joined by flowery, lemony hop notes in mouth. The bitterness is subtle and has a minerally, tightening character joining forces in the finish. A previous version was 5%, this is lighter and makes for a remarkable refreshment on sunny summer afternoons spent waiting in line at the Farmstead. Not their most complex nor intense ale, but a very satisfying one, showcasing each ingredient in a balanced unisson like you would expect a German brewer to do. And the texture is again refined and the work of a perfectionist. What more can you ask?

Growler thanks to GT. Cloudy pale straw pour with a white head. Lemony aroma, some white pepper, coriander, and orange. Doughy malt, biscuit, and cracker. Notes of pear and banana, too. Maybe a bit of sulfur? Kind of pedestrian. Flavors of lemon and orange peel, pepper, coriander, and pear. Has more of a witbier character than saison. Dough, biscuit, and cracker malt notes. Just okay.

750mL flip-top growler 2-Day aired to me thanks to jbeatty. Pours a full haze white with hefty white foam and sharp carbonation. Nose at first is heavy phenolics, diaper and solvent. Thankfully it brushes off with some aeration and gains a bright coriander/white pepper and lemon zest along with backseated witbier esters. Taste is rich, clean, mild sweet cream butter, a Hill Farmstead house yeast byproduct, with big dough and light plastic. Palate is aerated, fluffy, quenching. But comes across more as a witbier than a saison. I guess a 3.4 is an Asian F for Hill Farmstead. Would like to try out of a bottle and re-rate.

Growler from the brewery, listed at 4.3%, 07/28/2013. Pours hazy, golden straw color, creamy white head, lacing clings around the glass. Aroma is floral wheat, yeast, light lemon and subtle fruity overtones, soft earthy pepper. Taste is hay, lemon, peppery yeast, grassy hops and spices. Light body,bright, crisp and super refreshing. Lovely.

Thanks to jwale73 for this bottle!! Pours super hazy pale yellow with a white crown and lumpy lacing. Smell is pepper, spice, lemon. Taste starts of peppery then it is citric flowing into sourness from the brett and it all ends very dry and citric. Light in body and smooth...slightly slippery. A splendid beer - my friend said that it reminded him of a berliner weise...I think there is truth to that.

UPDATED: JUL 22, 2013 A - pours super light effervescent golden straw with 1 finger fluffy white head that hangs out like egg whites. S - nice light wheaty, hay, light egg funk. Subtle banana esters and biscuity malts. Simple light and subtle. O - nice light tart bright mf. Effervescent and lively carb. Light but substantial body. T - nice tart lemon juice, grass/alafalfa with sweet citrus fruit juices on palate. Nice subtle wheat, banana esters and quiet spices on the end. O - nice quiet lightly tart subtle sweet saison. 4.2
