Florence (1915-1967) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Belgian inspired Wheat ale is crafted from American malted barley, Organic Vermont wheat, European and American hops, our distinctive farmhouse yeast and water from our well. It is unfiltered and naturally carbonated. Soft, cloudy, and fresh, this is the ale that I dream to have shared with Florence. 5% ALC/VOL 12º P Ingredients: Pale Malt; Vermont Organic Wheat; American and European Hops; Ale Yeast, and our Well Water.

UPDATED: NOV 2, 2013 Bottle. Hazy hay yellow liquid with medium white head. Aroma of earth, barnyard, red berries, wheat, flowers, tangerine, bread and grain. Taste is dry, light bitter and light bitter with notes of tangerine, bread, mango and earth. Medium bodied with medium carbonation. Nice and refreshing.

Bottle:   Pale straw, bright, faint haze, somewhat assertive carbonation, large pillowy white head, nice lacing.   Bright barnish nose, floral, musty, a little rustic.   Bright, vibrant, and smooth on the tongue.   Floral, a bit rustic, even seems to have a slight white wine aspect.   Very clean, fresh, and a touch dry.   Moderate to full body and mouthfeel.   While smooth up front, it gets a little bubbley on the backside.   Finishes musty, barnish, with floral and bright herbal notes.   Great balance, great beer!

(Growler) Pours a hazy yellow body with a small white head. Aroma of lemon peel, grass, herbs, and florals. Flavor of herbs, grass, lemon, florals, yeast, pear, and biscuit with a dry, bitter finish.

Bottle tasting with Kaufmanised; cloudy yellow pour with creamy white head, funky aroma, tart slightly cheesy definitely funky, a hint of wit spiciness.

Thanks to someone for sharing this bottle at bu11zeye’s. Yellow pour with a white head. The aroma is full of yeast and pepper. The flavor is also very nice. I get some yeast, biscuit malt, pepper, grass and some light citrus. Medium mouthfeel and medium carbonation.

Pour at HFS Farmhouse Fest. Pours a clean golden color with a finger of tight white foam. Aromas are rustic grain, lemon, floral and grassy. The palate has a bit of strange floral bouquet that is a bit overwhelming but tails of as the grainy rustic yeast profile balances it out. Have had this many times but just getting around to rating it and unfortunately this most recent pour was the least impressive of the bunch... but still a good beer.

Bottle (Dregs)... RBWG 2013… Pours murky and nearly white with a small, fizzy, white head. Decent retention. Herbs, flora and bread dough construct this beer’s bouquet. Medium-bodied with tingly carbonation. The flavor presents an excellent balance of malt, hops and acidity, but it’s quite restrained. Finishes tangy and a touch dry. Too phenolic for my liking.

On tap @ the brewery. Pours a hazy light straw color with a nice fluffy white head. Aroma is floral, light citrus, and hay. Taste is similar. Fruity, some yeasty funkiness, hay, and light citrus.

Rastacouere (6134) - Montreal, Quebec, CANADA - AUG 1, 2013
Very pale cloudy, almost murky yellow pour from a 750 ml growler and topped by a small white head when poured directly in the center. Highly rustic nose with spelt-like wheatiness that is fresh, cracker-like and a nice fit to the spicy, gently doughy and minimally bubblegummy yeastiness. Hay-like fresh cereals are quickly joined by flowery, lemony hop notes in mouth. The bitterness is subtle and has a minerally, tightening character joining forces in the finish. A previous version was 5%, this is lighter and makes for a remarkable refreshment on sunny summer afternoons spent waiting in line at the Farmstead. Not their most complex nor intense ale, but a very satisfying one, showcasing each ingredient in a balanced unisson like you would expect a German brewer to do. And the texture is again refined and the work of a perfectionist. What more can you ask?
