Florence (1915-1967) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Belgian inspired Wheat ale is crafted from American malted barley, Organic Vermont wheat, European and American hops, our distinctive farmhouse yeast and water from our well. It is unfiltered and naturally carbonated. Soft, cloudy, and fresh, this is the ale that I dream to have shared with Florence. 5% ALC/VOL 12º P Ingredients: Pale Malt; Vermont Organic Wheat; American and European Hops; Ale Yeast, and our Well Water.

Latest batch. Over-carbonated; the liquid essentially evaporates in my mouth. Scents of saison yeast and water chestnuts fill the air. Rather bland on the palate though; wheaty base doesn't do much for the body either -- this is much too thin. Not much flavor overall. Pretty disappointing for a HF beer.

750ml bottle, shared by caterwaul. Hazy whitish yellow color. Good big white head, fades to a reasonable amount. Decent lace. Big floral citrusy nose. Taste is less impressive, but still good. Floral, citrusy hops. Light tart, little bitter, very good and drinkable. Good, light soft carbonation. Very smooth. Great saison. Nice lemon-peel. Good floral smooth bright citrusy refreshing drinkable stuff. Nice agreeable yeast character. A very saison-like wit.

750mL bottle, pours a cloudy pale yellow with a medium white head. Nose is full wheat, mild citrus notes, crackers and very subtle coriander. Flavour is full on wheat dominated, with signature Hill Farmstead Belgian yeast, very subtle tart citrusy quality, and more wheat. Finishes on notes of wheat and lightly tart citrus notes. Very light-bodied, medium carbonation, and very wheaty. Great stuff, but far from my favourite Hill Farmstead bar.

Bottle at home. Pour is hazy yellow with a huge white head and great lacing. Citrusy, lemony, tangy, yeasty aroma - straw, light pepper, a touch of vanilla, and biscuit. Taste is clove, rosemary, spritzy, wheaty, white pepper, lacto, wood, floral hops, grass, hay, and biscuit with a lightly spicy bite on the finish. Light body with high carboantion. Great session beer. Would be awesome to have this in quantity during a hot summer day.

Bottle shared by Drew. Thanks! Pours a bright pale gold/yellow, hazed. Not sure why this is a witbier. It’s a wheat saison, but not a wit. Whatever. Nose is citrusy and clean. Quite crisp and light. Grainy wheat and powder. Distinct pineapple brett notes, earthy and clean. On tasting, medium body. On tasting, crisp and clean, light across the palate. Good citrus notes to go with the graininess. Moderate tartness carries it through. Drying brett on the finish. Really great saison.

750 ml bottle shared by Cam- thanks again! Pours a clear, pale yellow-gold color with a big white head. Aroma of bread and wheat, straw, farmhouse funk, husky grains, and mild spice. Really nice aroma. The flavor is a super light version of the same. Light-bodied, with moderate carbonation and a dry, thin mouthfeel. A little bit of a letdown compared to the others we tried in the tasting.

Bouteille de 750ml. Bière qui fait du bruit, elle picote les oreilles. Elle est jaune blé avec une mousse blanche à grosses bulles. Le nez est acide de blé avec du citron et de pommes. En bouche le liquide est mince, la levure saison se marie bien avec le blé (acidité). La finale est sèche et citronnée, désaltérante, un produit estival facile et de grande qualité.

Received from an awesome trading partner out east. Pours a pale golden color, with about two fingers worth of tight, creamy white head. Nose is more reminiscent of a wit in my personal opinion. There is wheat, coriander, earthiness, and some light lemon. The flavor is floral, earthy, lemon, and lightly tart. Mouthfeel is light and airy, with gentle carbonation, and no a idity. Definitely nice, but not my favorite among their saisons. Would have to say I prefer Flora as well.

750ml bottle pours a clear, straw yellow with some frothy, white head. Nose is only slightly phenolic, grassy, floral, wheat, hay. Flavor is malty and grassy, chalky, a little white flour, some light pepper. Very well restrained. Dry finish. Lovely.

Pours a slightly hazy pale yellow with a thick foamy white head. Aroma has fresh orange, honey, and citrus rind...a touch of funk. Flavor has tart lemony citrus, some bretty funk, light orange, and citrus rind. Mouthfeel is light and lively and the finish is dry...funky and citrusy with grapefruit.
