Florence (1915-1967) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Belgian inspired Wheat ale is crafted from American malted barley, Organic Vermont wheat, European and American hops, our distinctive farmhouse yeast and water from our well. It is unfiltered and naturally carbonated. Soft, cloudy, and fresh, this is the ale that I dream to have shared with Florence. 5% ALC/VOL 12º P Ingredients: Pale Malt; Vermont Organic Wheat; American and European Hops; Ale Yeast, and our Well Water.

Bottle, courtesy of a kind soul... shared in a location remote of my dining room.
Pours a sunny yellow with a medium sized head and some lacing on the glass.

The aroma is floral and lemony. It’s got what I would best describe as a rich, or multi layered funk with some hay & some general farm animal character.

The flavor is dry but nicely bright with a decent fruitiness throughout. IT’s earthy and tart with some lemon and some great light peppery and floral notes. The bitterness is fairly low but well employed. This is about as balanced as funky saison gets.

Maybe I’m a sucker for these beers? I don’t know, seems like this is pretty great though.

Sample at First Sunday. Another subtle and well made beer here. Fruity lemon aroma. Finish is a little sour and funky. Earthy grass and hay hop aromas and flavors are most prominent but all complementary and well rounded.

Bottle: Hazy, bright golden body with a soapy & bright white head that leaves lots of blotchy lacing as it recedes. Sour wheat aroma, white grape, pear skins, light musty cotton, some mildly barnyardy funk, tart lemon. Little bit of vibrant yeast & hay. Nicely tart up front; lemon, white grape, citrus. Sharp, dry with a good dose of musty yeast, mineral water, & pale malts. Tart, dry finish, very clean with a lingering grape & pear flavor, leaves you craving more. Delicious beer, drinkable as hell.

Bottle "14 release. Clear yellow pour with a fluffy white head. Mild wheat and yeast aromas. Smoothness from the wheat blends nicely with the somewhat tart lemon and citrus notes. A bit on the tangy side with bread and floral back beats. A really solid saison. Above average body and mouthfeel.
