Florence (1915-1967) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Belgian inspired Wheat ale is crafted from American malted barley, Organic Vermont wheat, European and American hops, our distinctive farmhouse yeast and water from our well. It is unfiltered and naturally carbonated. Soft, cloudy, and fresh, this is the ale that I dream to have shared with Florence. 5% ALC/VOL 12º P Ingredients: Pale Malt; Vermont Organic Wheat; American and European Hops; Ale Yeast, and our Well Water.

Bottle. Hazy to cloudy yellow color, large pillowy white head. Nice aroma of rising rye bread dough, light funky and perfumy citrus. Taste has softly sour and funky lemon, straw, hay. Delicious.

Bottle, 75cl. An unclear pale golden to yellow beer topped by a small white head that stays. It’s very fruity on the nose, with lemon juice, grapefruit, tropical notes and a hint of yeast. It’s lightly acidic on the palate, pleasantly carbonated, dry and medium to full bodied. Lemon juice, some pine cones, a little bitterness and a touch of tropical fruits in the flavor. Grapefruit and pepper hints too. Lasting finish. A tad boring in a way, but very refreshing and quenching. 150704

UPDATED: SEP 26, 2015 Growler at the Funky 6. Pours cloudy gold with a moderate, white head. Lemon zest aroma with notes of Belgian yeast and bready malts. Nice citrus, bread and honey sweetness, with some light earthy bitterness. Light to medium in body with average carbonation. Dry finish, with further lemon and cereal. Very nice. (First rated August 2010, score: 3.8)

Had a bottle on 25 September 2015 and thought it was pretty damn good. Bumping the rating up to 4.0.

Bottle @ Mr.Orla meets Shaun Hill, Odense. Pre C4 Pale Ale Festival, 2015. Pours Hazy yellow with a white head. Farmyard, brett, funk and hops. Smooth and dry. Funky and complex! Dopeness!

Growler thanks to GT. Cloudy pale straw pour with a white head. Lemony aroma, some white pepper, coriander, and orange. Doughy malt, biscuit, and cracker. Notes of pear and banana, too. Maybe a bit of sulfur? Kind of pedestrian. Flavors of lemon and orange peel, pepper, coriander, and pear. Has more of a witbier character than saison. Dough, biscuit, and cracker malt notes. Just okay.

Capped 750 from jredmond. Pours hazy gold with a white head. Aroma is funky, earthy, wheaty, but in a good way, wheaty wise. Med body. Flavor is mildly tart/sour fruit. Quite tasty.
