500ml bottle from the premise drank in this cabin in the woods in Ferme-Neuve with the kids. For the records, the kids didn’t drink any, no need to call child protection care. Aroma: strong boozy bourbon / alcohol, woody, chocolate, light molasses. App: dark brown, small brown head, nice lacing. Taste and palate: medium to full body, extremely creamy and smooth, soft carbonation, subtle acidity and bitter / sweet and alcohol finish. Overall: really like this one. The feeling of being in vacation and in a cabin in the woods with my kids probably helps a lot but I don’t really care. This is exactly what I needed. This beer is so smooth but also feels really strong at the same time. Perfect mouthfeel. Also love the boozyness.

2016 batch bottled 1/7/16 Black pour with a thin tan head ... Aroma of bourbon, molasses, oak, boozy, roasted malts, chocolate/fudge, dark fruity yeast and light coffee .... Taste is of sweet chocolate, fudge, bourbon, vanilla, spicy, molasses and some dry oak, has some coffee elements as well as roasted malts and dark fruity yeast ... Mouthfeel is very slick and oily .... Sweeter than I’d have liked although some of the spicy booze offsets it .... Finished dry sweet and with lingering boozy bourbon

Black pour. Little to no head, unless forced. No lacing. Big boozy note right up front. Chocolate nose. Fudge. Molasses. Fudge mouth. Big boozy note follows in the mouth as well. Slight note of coffee. A little one dimensional.

Merci à Marc pour ses expéditions Hill Farmsteadoises. Dégustée 07-05-16. En olfactif, on a évidemment du Bourbon, mais aussi des cerises, des brownies au chocolat, du nougat, des figues. L’équilibre des arômes est parfait. Le visuel est noir, pas totalement opaque, avec des reflets rougeâtres et brunâtres. Très peu de mousse. En bouche, c’est du vrai bonbon. Tous les arômes sont répétés dans une sublime onctuosité. Le nougat est en évidence avec des truffes au chocolat, du chocolat noir, du chocolat au lait, de la mélasse, des cerises des pruneaux, des figues, du caramel. Le café est discret mais donne une juste amertume. Je n’ai jamais gouté une stout avec une telle complexité. Un grand cru magnifique.

Batch 2 (500 ml) bottle to snifter. Looks good; a nearly opaque very dark cola with fizzy mocha head that steadily dissipates into virtually no lacing. Smells of a nice balance of dark malt, chocolate, vanilla, coffee, and oak. Tastes like it smells, but sweeter, with a mildly bitter full-bodied mouthfeel that’s silky and smooth for the abv. Tasty.

Batch 2. This was only purchased a week ago, and it might be a little too young still. There’s a ton of beautiful bourbon flavor, but there’s so much alcohol heat and blunt oak notes that it is a bit of an all-out assault on the tastebuds. Still, it’s so tasty and well made that I didn’t mind getting assaulted by this one!

Vintage ‘13 dégusté sur place. Liquide noir monté d’une tête à la teinte parfaite : ni trop foncée pour annoncer une forte torréfaction, ni trop claire non plus. Cette dernière ne se dissipe que très lentement en laissant place à une mince couche mi bulleuse mi huileuse. Les 3 années de maturation en bouteille lui vont à ravir! La bière a, pendant cette longue période d’attente, gagné en gaz et en souplesse, élément qui font souvent défauts aux bières sombres de Shaun lorsque consommées trop jeunes. Un nez d’une grande complexité où se chevauchent des notes de bois gorgé de bourbon, une étoile de badiane, du chocolat noir et un caramel mou. Franchement un nez à la fois décadent et d’un grand raffinement. La texture du liquide est tout aussi exceptionnelle. J’ai l’impression de boire du fudge! Le liquide coule est langoureux, plantureux, sexy! D’une exquise rondeur, une effervescence modérée mais suffisante pour soutenir cette mousse toujours en vie, je suis dans le chocolat noir à l’amertume modérée, le bourbon et le caramel. Longueur plus qu’appréciable, ce vintage est pour moi une référence absolue dans le style. Un impérial stout barriqué que je saurais boire tant à l’apéro qu’en dessert suite à un faste repas, hiver comme été! Du très grand art!
