COMMERCIAL DESCRIPTION
Jim (1954-1998) is the name by which our Uncle was best known; Hill Farmstead Brewery rests upon the land that was once home to him and his four siblings. In his honor, we barrel aged our Black Ale (James) in a French Oak Pinot Noir barrel for 4 months and dry hopped the beer with Simcoe. Naturally carbonated and hand bottled, this is one of only 300 bottles. 7.5% ALC/VOL 16.8º P Ingredients: Pale and Caramel Malt; Roasted Barley; Centennial, Columbus hops, and Simcoe hops; Ale Yeast, and our Well Water.

Unclear dark brown color with a average, frothy, good lacing, mostly lasting, off-white to beige head. Aroma is moderate malty, roasted, dark malt, moderate to heavy hoppy, pine, grapefruit, ovrange - citrus. Flavor is light heavy sweet and heavy bitter with a long duration, late finish has medicine notes. Body is medium, texture is oily, carbonation is soft. [20101102]

50 cL bottle, courtesy of BearsOnAcid. Pours dark brown to black with a small tan head. Nice lacing head. Aroma is fruity and wineous. Distinct hoppy and grapefruity. Dark roasted malt, citrusy and grapefruity. Citrusy and peachy. Dark roasted malty. Crisp hoppy and citrusy. Lingering hoppy and fruity. Bitter.

Bottled. An almost opaque black beer with just a hint of red shine under a thin lazing brown head. The aroma has strong notes of hops and roasted malt as well as medium notes of alcohol and wood. The flavo ris sweet malty with notes of roasted malt and alcohol, leading to a very bitter finish. Thanks yespr for sharing.

Bottle 50 cl. Courtesy of yespr. Pours an opaque black with a rough yet creamy beige head. Fresh citrusy hops in the nose – very fresh indeed. Medium body, some roast and dark fruits but the fresh and citrusy hops dominate yet making for a perfect balance. Great hoppiness in the finish, but not overly bitter. Delicous indeed.

Bottle at Papsø, thanks Jesper. Clear dark brown coloured with a medium sized beige head. Fruity aroma of pine needles, peaches and hops. Fruity flavour of pine needles, peaches and hops with roasted notes. Roasted and hoppy finish.

Bottle, 7.5%. Great grassy and piney hop aroma. Black colour, seems unclear. Small stable light brown head. The flavour is nicely roasted, soft but distinct. Lots of coffee notes, dark bitter chocolate. The mouthfeel is good with a nice carbonation, but slightly watery considering the powerful flavour of the beer. On top of the roasted notes, there is a nice layer of hops. Perhaps bitter, but that is hard to tell because of the roasted bitterness. But nice and refreshing, grassy and piney, though not as much as in the nose.

Pours deep black with a lovely, staying, creamy, beige head. Aroma is splendid, grapefruit, citrus, coffee, chocolate, apicot, melons. Soft oaky presence. Medium carbonation, fine dry and creamy mouthfeel. Flavour has citrus, coffee, dark chocolate. Then apricot, grape, oak and a lovely dry and mildly vinious finish. Truly amazingly balanced and the epitome of elegance in oak aging.
