3.8 AROMA 8/10 APPEARANCE 4/5 TASTE 7/10 PALATE 5/5 OVERALL 14/20
Bottle shared generously by chpueblo22, thanks Tom! Mimosa has a dark yellow color with a thin white head. Smell is orange rind/zest, oak, lemon and...ale? Taste is dryer than I expected with notes of light orange zest, white pepper, and very soft grapes. High carbonation and very Champagne-like with tiny bubbles and a dry minerally finish. Not my favorite from HFS, but nearly spot on to what I imagine Shaun was going for. If you like dry saisons or Champagne you will undoubtedly love this beer.

Tastes similiar to a mimosa, not a sour beer at all, orange and pineapple flavors, good.

4 AROMA 8/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 16/20
Review from backlog, bottle reviewed 08/12/2012. Pours hazy golden orange, soft frothy white head, sticky lacing. Aroma is soft yeast, wheat, pronounced orange citrus, tart funky edge. Taste is tart, sour orange, intensely fruity, citrus hops, a bit of booze, alcohol coming through to give a champagne-like bitterness, dry finish. Medium bodied, spritzy. Tasty for sure, but almost a bit one-dimensional, lacking some of the complexity found in other HF brews.

4.7 AROMA 9/10 APPEARANCE 4/5 TASTE 10/10 PALATE 5/5 OVERALL 19/20
Bottle via international trade; enjoyed with Kaufmanised, Cloudy amber pour with white head, citrus aroma, a big hit of Brett sour funk, strong taste of Christmas fruit bowl satsuma, mandarin, oranges, just a massive delightful fruity taste, some peppery yeast action, decent fizzy mouthfeel, overall a memorable beer experience which is unlikely to be repeated.

4.1 AROMA 9/10 APPEARANCE 3/5 TASTE 8/10 PALATE 4/5 OVERALL 17/20
Sample from a bottle at DLD ’11. Pours a hazy yellow golden color with a medium sized fluffy white head. The aroma is orange citrus, hay, funk, Brett, yeast and some floral notes. The flavor has a great blend of the juicy citrus with orange zest, Brett, funk, hay, and hints of spicy hops. I was shocked to see this was 10%, it is too easy to drink.

4.3 AROMA 9/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 17/20
750ml bottle in a Hill Farmstead glass. Pours orange/amber with a lacy, off-white head. Aroma of a lot of citrus, some white wine, a lot of citrusy and floral hops, a nice clean Bretty-ness, a good amount of wheat and pale malts, plus just a lot fruit. Flavor the same. Smooth texture. A great beer.

3.9 AROMA 7/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 16/20
UPDATED: MAY 17, 2013 Woodshed 2.0. 750mL bottle share courtesy of BOLTZ7555. It pours with a opaque deep gold body and copper core supporting a bright white head of foam. Nice looking beer. The aroma is a mix of green apples, peach and pear flavored cotton candy. The taste is rich and crisp and snappy and smooth all at the same time. It delivers various fruity notes like peach, grapes and apples as well as mild smooth saison yeastiness.
