Mimosa began as an idea: a beer inspired by our obsession with citrus. We built a recipe comprised of our favorite ingredients: Local organic raw wheat, Citra and Galaxy hops, Brettanomyces, and a healthy addition of fresh citrus zest. After 8 months of conditioning in wine barrels with our resident microflora, Mimosa is now ready to be enjoyed. 19º Plato 500 icus 10% abv

Huge thanks to Scott for sharing this bottle at Dmac’s. Pours out a cloudy/murky golden color with a light white head. Aroma is of citrusy fruits, some hop bitterness, orange blossom and light tartness. Taste is complex, oranges, some nice lightly funky yeast notes, apricot, some more funk, citrus, with a touch of bitterness on the finish. I could not believe this was a 10% beer, alcohol is wonderfully hidden. HFS hits a home run on this one.

Huge thanks to Dave. Pours a cloudy orange with thick frothy white head that lasts leaving sticky lacing. The aroma is a strong peach, mango, papaya, sweet juicy citrus. Thick mouthfeel that coats your mouth with juicy mango, peach, brett, funk, wow this is amazing.

Huge thanks to Deuane for busting out one of his bottles for us to try at the last monthly tasting. Another long time HF want bites the dust!

A - Pours hazy bright orange with a beautiful one and a half finger tall white head, slowly dissipating down to a light film, leaving sticky webs of lace on the sides of the glass. Beautiful looking beer.

S - Smells of orange zest, woody oak, bit of wine spritzer, good amount of typical HF saison funk, dash of earthen mineral and some wet hay. Some of the orange has definitely faded away but it still smells amazing.

T - Starts off with a mix of earthen mineral, wet barnyard hay, light funk and oaken wine quickly being joined by the orange zest and pulp and some bready malt helping to back up all of the other flavors. Finish is pretty dry, not lingering for very long after the finish.

M - Medium-Light body with moderate carbonation. Smooth, juicy feel with some nice backing funky earth that keeps me coming back for more.

O - This has aged beautifully well. The fruit has definitely fallen off a bit but the fruity/funky yeast has made up that gap. I would have loved to have tried this one right when it came out as it is just marvelous right now. Thanks again for the share Deuane!

Pours a clean golden orange color with two fingers of white foam. Lots of citrus punch, with tangerine, citrus pith layers of wet vinous barrel flavors. A touch boozier than expected with some funky barnyard complexity balancing the creamy cereal malt backbone. Hints of vanilla, stonefruit and soft brett influence. Dry finish.

750ml bottle shared with big thanks to Matt for offering up this rare beast! Pours cloudy orange with a finger of head. Nose is bretty, earthy dry wheat, rustic subtle citrus, funk. Taste is earthy dry malts, balanced fruity brett, some soft lemon and clementine, zest, barnyard funk, soft oakiness. Finish is dry bretty citrus, funky oak, body has nice malty creaminess and fluffy mouthfeel. A treat to try!

Bottle 361 pours a clear golden orange with a large off-white head. Aroma of Brett, hops, bready dry wheat malt, and lots citrus. Very tart, strong hits of Brett, and oranges, with dry bitter hops. Very enjoyable!

750ml bottle (2011 bottle 56 of 450). Huge thanks to Scott for sharing! Pours a hazy golden orange color with a thick pillowy white head. Aroma of sour citrus, pineapple, orange, grapefruit, lots of funk, and brett. Taste of biscuity malt, sour juicy tart citrus, orange zest, orange pulp, and lots of funky brett. Awesome!

Review from backlog, bottle reviewed 08/12/2012. Pours hazy golden orange, soft frothy white head, sticky lacing. Aroma is soft yeast, wheat, pronounced orange citrus, tart funky edge. Taste is tart, sour orange, intensely fruity, citrus hops, a bit of booze, alcohol coming through to give a champagne-like bitterness, dry finish. Medium bodied, spritzy. Tasty for sure, but almost a bit one-dimensional, lacking some of the complexity found in other HF brews.

Bottle via international trade; enjoyed with Kaufmanised, Cloudy amber pour with white head, citrus aroma, a big hit of Brett sour funk, strong taste of Christmas fruit bowl satsuma, mandarin, oranges, just a massive delightful fruity taste, some peppery yeast action, decent fizzy mouthfeel, overall a memorable beer experience which is unlikely to be repeated.

Sample from a bottle at DLD ’11. Pours a hazy yellow golden color with a medium sized fluffy white head. The aroma is orange citrus, hay, funk, Brett, yeast and some floral notes. The flavor has a great blend of the juicy citrus with orange zest, Brett, funk, hay, and hints of spicy hops. I was shocked to see this was 10%, it is too easy to drink.
