Mimosa began as an idea: a beer inspired by our obsession with citrus. We built a recipe comprised of our favorite ingredients: Local organic raw wheat, Citra and Galaxy hops, Brettanomyces, and a healthy addition of fresh citrus zest. After 8 months of conditioning in wine barrels with our resident microflora, Mimosa is now ready to be enjoyed. 19º Plato 500 icus 10% abv

In short: When fresh: A citrusy wild ale like no other. With some age: A very rustic strong wild ale with well integrated citrus fruits
How: From very fresh to slightly aged. Tap at the brewery a few events, two bottles split two-way. This rating for a bottle split two-way approximately 6 months after the beer release and comments from other experiences
The look: Cloudy blond body topped by a medium white head with good retention and leaving lots of lacings on the glass
In long: Nose is very wild with plenty of bold brett over nice fresh citrus fruits. Taste is refreshing fresh fruits (citrus fruits & tropical fruits) swimming in wicked wild yeast mixture that is not only funky bretty but also very rustic Saison. The 10% is absurdly well hidden, this beer is almost as easy to drink as some of HF 6% Saisons. Not the most complex by this fin brewery, probably the most straightforward Saison/Wild they have made so far. It is very surprising to taste the two beers made using citrus fruits from HF (Daybreak and Mimosa) fresh and aged, in both cases the citrus fruits became almost totally assimilated by the beer after only 6 months of aging. I much preferred the fresh citrusy Daybreak but I preferred less citrusy aged Mimosa. The Mimosa has now developed into a wicked wild beer now that it is not overwhelmed by the citrus fruits anymore. This beer has serious aging potential. Mimosa has become a much coveted beer, almost whale status, and if anybody reading this rating would like to learn about an easy way to acquire some Mimosa for cheap without having to trade precious beers than feel free to beermail me, and then we can talk about how much we would both like to know of an easy way to acquire some Mimosa for cheap without having to trade precious beers.

Pours shining bright golden orange with a beautiful white head - wow! The aroma brings plenty of citrus and hops, muted sweetness, and sweet tanginess. The flavor is the same, citrus, tangy sweetness and orange juice straight up settling on the palate. It lays thick on the tongue, but perfectly enjoyed there with a smooth tartness. The Brett hasn’t fully kicked in but this beer is close to perfect as usual from Mr. Hill.

Bottle @ fonefan tasting. Nice head with excellent duration. Color is hazy golden. Aroma and taste are citrus, hops, flowers, fruits, brett, white wine and malt. Vnous with a nice sour touch.

Bottle, 75cl. Very slowly gushing, producing a big, creamy, white head leaving lacings. Pale yellowish golden body. Quite flowery aroma, with citrus peel, some woody hints, a touch of pale malts, some saison yeast, a little impact from the brett, and a faint peppery hint. Medium body, dry and quite effervescent, lightly warming. There’s some warmth in the finish, with a little bitterness. Elderflower, citrus peel, grapefruit notes , some bretty hints and a spiced note. Lasting finish. A really wonderful one, it should probably be a bit lower in alcohol, I also prefer my saisons to be sessionable, but I’m certainly willing to have a strong saison every now and then if they’re as tasteful and wonderful as this one. [ Bottle # 61/450 ]. Clear medium to dark amber orange yellow colour with a average to large, frothy, good lacing, fully lasting, white head. Aroma is moderate malty, moderate to light heavy hoppy, citrus, moderate to heavy yeasty, saision yeast, spicy, white wine, brett. Flavour is heavy sweet, light to moderate acidic and moderate to heavy bitter with a long duration, fruity, tart, hoppy, grape, brett, saison yeast, grapefruit dry and bitter. Very complex and power full both in aroma and flavor. Body is medium, texture is oily, carbonation is soft. [20121109]

Appearance: pours a cloudy amber gold with a lasting white head.

Aroma: Sour citrusy fruit, citrus, dank weed.

Taste: Funk. Orange juice. Sharp yeast. Lingering sour funk flavors.

Mouthfeel: Full bodied, creamy gentle carbonation.

Overall: Pretty darn tasty, alcohol is well hidden. Definitely not drinking like a 10% beer.

Bottle acquired via trade with AirForceHops and shared at Woodshed 2.0! Glowing 24 karat pour with a tightly packed ivory foam. Bright orange peel, grapefruit pith, and lemon zest accompanied by saison yeast, brett, and spicy leafy hops. Absolute notes of wet barnyard hay, funk, and mild acidity. Wildly complex...one of the best of the day for sure!

750ml bottle in a Hill Farmstead glass. Pours orange/amber with a lacy, off-white head. Aroma of a lot of citrus, some white wine, a lot of citrusy and floral hops, a nice clean Bretty-ness, a good amount of wheat and pale malts, plus just a lot fruit. Flavor the same. Smooth texture. A great beer.

Huge thanks to Scott for sharing this bottle at Dmac’s. Pours out a cloudy/murky golden color with a light white head. Aroma is of citrusy fruits, some hop bitterness, orange blossom and light tartness. Taste is complex, oranges, some nice lightly funky yeast notes, apricot, some more funk, citrus, with a touch of bitterness on the finish. I could not believe this was a 10% beer, alcohol is wonderfully hidden. HFS hits a home run on this one.
