This bottling of our Dark Farmhouse Ale, Phenomenology of Spirit, was cooled overnight, exposed to winter air and 100% spontaneously fermented in oak barrels through the introduction of airborne yeast residing in and around our brewery. The beer has rested, quietly, in a diverse selection of oak barrels for nearly 18 months. Naturally carbonated and unfiltered, we feel that this is an authentic expression of our environment and of our brewery.

Pour brown dark amber. Nose is of sour cherry. Taste has sour cherry and raisin. Good stuff.

Thanks Erik via TB. This is a dark ass beer. Almost looks like a light porter. Aroma of sour cider. Taste is Grammy smith apple cherry. Just the right amount of sour and tartness. This is a really good sour.

Dark brown pour with a tan head. The aroma has some strong toffee and dark fruit notes. The flavor is a mix of dark fruit, caramel and toffee malt, and some light tartness. Medium mouthfeel and medium carbonation.

375ml bottle poured into the #properglassware. Aroma is almond milk, faint cocoa, earthy spice, faint vinous quality with a mix of sour vinegar. Pours cola brown with off white that that recedes to the sides of the glass. Taste follows aroma with nutty earthy tones, bakers cocoa, some red wine, oak, dates and figs with a sour bite. Definitely a funky beer. The body is light, maybe a little thin with high carbonation and a dry finish. I enjoyed the HFs wild ales quite a bit, and this was an interesting mix of flavors that are not overly acidic, or off. Solid beer.

(375ml bottle) clear medium dark brown, dark tan bubbles. Nose of chocolTe malt, light oak, bugs, wet wood, bit of cellar floor. Taste of tart lemon, wet wood, complex, light smoke. Palate linger is as good as it gets. Perfect carbonation.

Black with little head. Tart and fruity aroma, hint of dark malt. Really lactic and fruity. Really great beer.

Bottle at Matt’s with friends, courtesy of Armin. Big thanks for the pour man!! Pour is deep brown with a small tan head and decent lacing. Tangy, dark fruity, lightly spicy, cherries, funky, somewhat cheesy, bretty, caramelly, and roasty aroma. Taste is tart fruity, red grapey, blueberries, oaky, cherries, raspberry, lightly roasty, bretty, and vinegary with a medium tart finish. Slick mouthfeel with medium carbonation. Another solid offering from Hill Farmstead.

Pour out of 375 mL, thanks James! Thick brownish black pour with thin but lacing off white head, aroma brought notes of dark vinegar, oak, slight nice slight red wine vinegar notes, hints of nice bread, biscuit, hints of nice grass. Taste is a mix of nice yeasty notes, slight oak, red fruit, hints of red wine vinegar, finishing bitter, dry, slightly oak, hints of red fruits. Pretty nice.

Bottle @ Matt’s house, courtesy of Armin. Thanks! Pours a cloudy brown appearance with a light brown head. Grape, dark plum, caramel, wine, spicy fruity aroma. Juicy, rich dark grape, plum, fig, red wine, a bit spicy flavor. Dry, fruity and easy drinking.

Bottle again gigantic thanks to oteyj! Deep cola, dark mahogany pour with a fluffy off-white head. Nose and flavor are superb, with a gorgeous combination of dry roast, stunning vinous dark fruit, oaky dryness, and barrel-based funk. Complex, crisp and refreshing on the palate despite the richness of flavor. This and Tired Hands Guillemot make other dark saisons look like childs’ play.
