This bottling of our Dark Farmhouse Ale, Phenomenology of Spirit, was cooled overnight, exposed to winter air and 100% spontaneously fermented in oak barrels through the introduction of airborne yeast residing in and around our brewery. The beer has rested, quietly, in a diverse selection of oak barrels for nearly 18 months. Naturally carbonated and unfiltered, we feel that this is an authentic expression of our environment and of our brewery.

Dark bodied and with a creamy head. Funky, resin, fresh, bit woody, fermenting fruit and clear. Quite sour tasting at first and plucky. Not acidic at all though, so it’s certainly a taste that gets right in it. Somehow very well balanced though, because it developed so well. Absolutely nothing to do with a saison, not in the slightest. (Bottle shared with Fx and Tommy)

Bottle shared by someone at the West Lakeview Zwanze 2013 event. Light funk, oak, dark fruits, and acidity in the nose and leading into the flavor. Lightly acidic on the palate with earth and fruit out front. Really easy drinking and quite enjoyable.

Bottle @ The HUGE Tasting. Deep brown pour with a small head. Pennies, mineral. Some cherry and cantaloupe and fruit salad. The taste is moderately tart. Strawberry, peaches. Vibrant funk. Moderate acetic tang. Light body, deft. Overall, really tasty. Another solid offering from HF. I’m generally not a fan of dark saisons, but this works.

(60th Hill Farmstead Rating) Bottle... This beer rocks!... Muddy dark-brown pour with a small, creamy, khaki head. Decent retention. The aroma is a funky, malty marriage of toasted barley, barnyard, horseblanket, lemon peel and damp, fallen wood. Medium-bodied and milky with nearly-expired carbonation. The flavor is funky, toasty, earthy and mildly sour - musty oak, malic acid Michigan cherries and a hint of acetic acid. Crisp, tart, earthy finish. Muchos gracias to ctipping for providing this bottle of world class beer!

Bottle shared at the rather large Friday tasting, lashings of thanks once again to Leighton 03/01/14. Hazed dark mahogony brown with a moderate light beige covering. Nose is tarte dark berry fruits, bitter orange, dank red grapefruit. Taste comprises soured dark berry fruits, hedgerow, earthy, bitter grapefruit, straw. Medium bodied, fine carbonation, dry closure. Solid execution form HF once again!

Mega Tasting at Bruce’s pad. Thanks to HF requistioner extraodinairre Leighton. Opaque dark brown beer, small pale tan head. Palate is light and dry and crisp. Sourish dark fruits. Light touch of dark chocolate. Brett. Small dash of hops. Light dry finish with a sourish linger.

Bottle thanks to leighton at the Returneth of Jack tasting. It pours deep brown with a small beige head. The nose is dark fruit, blueberry, blackberry, bramble, jammy aspect and a touch of funk. The taste is crisp, tart, bramble, black grape, sherbet, tangy fruits, wood, earth, slightly vinous and a touch of spice. Medium body and fine, prickly carbonation. Nice tart, funky dark farmhouse number. Plenty going on and well-balanced. Nice.

Bottle shared in London while Jack’s in town. Picked up at the brewery. Pours clear, deep brown with a strong, creamy beige head. Tangy dark berries in the nose, good funk, sweat. Light sweet flavor with assertive tangy dark fruits, nice funk, hints of dark malts. Medium bodied with average carbonation. Great finish, loads of tangy dark fruits, dirty sweat, funky earth. Exceptional depth. All the flavors are true and deep. Wonderful.

Pour brown dark amber. Nose is of sour cherry. Taste has sour cherry and raisin. Good stuff.

Thanks Erik via TB. This is a dark ass beer. Almost looks like a light porter. Aroma of sour cider. Taste is Grammy smith apple cherry. Just the right amount of sour and tartness. This is a really good sour.
