Bottle @ Matt’s house, courtesy of Armin. Thanks! Pours a cloudy brown appearance with a light brown head. Grape, dark plum, caramel, wine, spicy fruity aroma. Juicy, rich dark grape, plum, fig, red wine, a bit spicy flavor. Dry, fruity and easy drinking.

My Bottom Line :
This very dry and tart creation develops pepper-laden earth notes alongside black grape fruitiness and wood before delving into a citric and lactic finish.
Further Personal Perceptions :
-A sizeable head of foam covers the darkness.
-That acidity is nearly refreshing (it’s a tad too intense to be purely refreshing, mind you).
-Carbonation is fluffy and all natural, which makes the dryness still feel quite comfortable.
-Lemon juice acidity and fruitiness stick to the palate in the finish.
-This is another one of those black brews which would surprise those who correlate color and flavor...

(375ml bottle) clear medium dark brown, dark tan bubbles. Nose of chocolTe malt, light oak, bugs, wet wood, bit of cellar floor. Taste of tart lemon, wet wood, complex, light smoke. Palate linger is as good as it gets. Perfect carbonation.

Pour out of 375 mL, thanks James! Thick brownish black pour with thin but lacing off white head, aroma brought notes of dark vinegar, oak, slight nice slight red wine vinegar notes, hints of nice bread, biscuit, hints of nice grass. Taste is a mix of nice yeasty notes, slight oak, red fruit, hints of red wine vinegar, finishing bitter, dry, slightly oak, hints of red fruits. Pretty nice.

Dark brown pour with a tan head. The aroma has some strong toffee and dark fruit notes. The flavor is a mix of dark fruit, caramel and toffee malt, and some light tartness. Medium mouthfeel and medium carbonation.

375mL bottle, sent from Glouglouburp (thanks a lot, Dany), pours a deep dark mahogany-tinged brown with a small beige head. Nose is extremely funky and wild-smelling, with loads of wild yeast, considerable tart funky notes, and oak barrels. Flavour brings out loads of tart leathery notes, lots of funk, lots of oak barrels, a touch of dark dry fruity notes, and finishes on tart woody notes. Very complex, with a wonderful array of flavours all working in harmony. Much more complex than the regular Phenomenology of Spirit. Excellent stuff.

375ml bottle shared by Ed5388, thanks breu. Poured a thicker bodied deep muddy blackish brown with an average sized tight foamy light beige head. Aroma is loads of sour, cherry, chocolate, wet oak, light alcohol notes, syrup, bactene. Great palate, lighter bodied with softer carbonation and that all around Hill Farmstead delicate mouthfeel. Flavor of yeast, choclatey, vinegar, acid, eraser shavings, slight spice, sourness. Solid beer but a saison???

bottle shared by fred82, thanks bro. pours almost clear dark brown with a small light beige head, some retention and lacing. complex bretty esters mingle with roasted malt and cocoa, some cheese, brandied fruits, brandy, cherries, kirsch, grape skin acidity, umami - mushrooms, chocolatey, peppery, spicy, just a hint of coconut. aged hops feeling too. very nice acidic profile - mainly lactic, light body - never watery thanks also to great bottle refermentation, ligthly acidic and mellow coffee finish. expectations were high, as non coolship version was a 5.0 for me - but i still believe that they were met! totally different though. just not as perfect but i truly loved this one!
