COMMERCIAL DESCRIPTION
Phenomenology of Spirit is our first collaborative saison - brewed with friends at Tired Hands, McKenzie, and our sister brewery, Grassroots in Denmark. This unique, Dark Saison was primary fermented in french oak wine casks along with multiple strains of brettanomyces and resident microflora. All of our collaborative beers receive names in the likeness of the great philosophical work that suits them. In this case, Hegel’s masterwork, which posits a foundation of dialectic and consciousness - seems to summarize the Spirit of this Saison.

A red-brown beer with a thin orangey head. The aroma has notes of brettanomyces, wine grapes, caramel, alcohol, and dusty hops. The flavor is sweet with notes of over ripe berries, malt, caramel, alcohol, brettanomyces, and wine grapes, leading to a dry and tart finish.

Bottle at yesprs blindtasting. Hazy red brown coloured with a small off-white head. Sweet and fruity aroma of red wine, caramel and oak with roasted notes. Fruity flavour of oak and red wine with roasted notes. Oaky finish.

Served from the bottle at the Night of the Funk 2011 forum. Reviewed from notes. Pours a very dark brown -- bordering on black -- with a good, thick tan head that lasts a bit before leaving some spotty lacing and falling to a collar. The nose is really complex and the wine-aging really comes through. Some red wine and moderate saison funk. A bit of roast there as well. The flavor melds wine, oak, and roast really well, taking it up a notch with the saison yeast. The finish is where the yeast really shines, combining with the roast for a spectacular finish. [ Courtesy of kristina ]. Clear dark red brown colour with a large, frothy to cream, good lacing, fully to mostly lasting, light beige head. Aroma is moderate to heavy malty, roasted, caramel, moderate yeasty, brett, red wine, dark fruit - berries, light barnyard, wood notes. Flavour is light heavy sweet, light acidic and moderate to heavy bitter with a long duration. Body is medium, texture is oily, carbonation is soft. Amazing balanced ... so lovely ;O) [20110416]

Draft at EBF. Pours a hazy amber bruin body with a an off white head. Dark fruit tones cherries, berries come to mind. Thinner spices tones light pepper and soft vanilla and oak. Mild bretty body should funk out nicely, a bit young when served.

Présence d’un moyen col beige mousseux et d’une fine dentelle sur le verre. Saveur: Léger goût de caramel fruité avec une légère pointe sûrette. Durée moyenne de l’arrière goût. UPDATED: JUN 3, 2011 Bottle 75 cl. Courtesy of kristina/grassrootsvt. Pours a warm clear reddish brown with a creamy off-white head leaving a beautiful rim of fine and delicate lacework. A most amazing aroma of dark fruits, wood and vanilla - and of course Brett. Medium body, dry and slightly tart woodiness, dark fruits, redwine indeed and amazing Brett and sophisticated funk. This is not in your face, but subtle subtle with an amazing balance. 160411 & 260511

Bottle, 75cl, shared by Papsoe. It’s a clear, dark reddish brown body and a creamy, finger-thick off-white head leavings lacings. The aroma is quite complex, a faint roasted or maybe smoked note at first, then the brett kicks in and also some hints of dried fruits. It’s dry and full-bodied, pleasantly carbonated, and with flavors of some chocolate, a pleasant fruityness, some brett and lemon and a fine bitterness. Lasting finish. A really nice one, tasteful and complex, and really moreish. 110416

Bottle @ Ulfborg Easter Tasting, 2011. Pours dark unclear amber with a small creamy white head. Nose is brett and redwine. Dry and fruity flavor. Oak, berries and brett. Hops in the end. Lovely balance and so uffin’ drinkable. My 2nd brew from the brewery and this is everything I expected. Dopeness!
