COMMERCIAL DESCRIPTION
Phenomenology of Spirit is our first collaborative saison - brewed with friends at Tired Hands, McKenzie, and our sister brewery, Grassroots in Denmark. This unique, Dark Saison was primary fermented in french oak wine casks along with multiple strains of brettanomyces and resident microflora. All of our collaborative beers receive names in the likeness of the great philosophical work that suits them. In this case, Hegel’s masterwork, which posits a foundation of dialectic and consciousness - seems to summarize the Spirit of this Saison.

on tap at brewpub. medium dark brown, orange tint, nice light beige head, very good retention and lacing. yeast, dark malts, oak, bretts, peppery, medium hopping - grassy, citrusy twist. lively, medium to full body. just awesome.

Pours an amber brownish with a larger foamy/bubbly off white head that laced. Aroma of wonderful Brett notes, floral, citrus, tart cherrie and spicy saison character. Flavor of a nice rounded Brett profile, spicy saison character, hints of roast bitterness, nice and dry.

On tap at Hill Farmstead Gathering. Wonderful mix of bretts, oak, vanilla and dark fruits. The wine barrel seems totally appropriate here. Rustic flavors from the bretts blends nicely with the oak sweetness and the wine barrel sourness. My new favourite from HF.

Wonderful vinous aroma right up-front, followed by dark cherries, funk, small barn yard and a dose of spice. Head was off white chantilly which dissipated to a smaller and more cohesive version of itself. Flavor is an enticing melange of pungent, dry red wine, then followed by dark berries, black cherries, some hay/barnyardiness and some absolutely unique sour elements.Mild lacto? Overall, it has medium drinkability ( due to well rounded flavors) appropo carbonation (to style) and a ferocious need to be enjoyed. Awesome-to-funk balance and well rounded with the wine notes

Delicious and very unique beer! The oak is a great addition, tasted like fantome yeast possibly, and the darker malts all work together fantastically on this beer. Spice-y lemon lime, sweet molasses and bready malts, drk fruits, prune, fig, slightly bittersweet. very complex and tasty stuff. Glad i got to try this.

UPDATED: JUN 3, 2011 Bottle 75 cl. Courtesy of kristina/grassrootsvt. Pours a warm clear reddish brown with a creamy off-white head leaving a beautiful rim of fine and delicate lacework. A most amazing aroma of dark fruits, wood and vanilla - and of course Brett. Medium body, dry and slightly tart woodiness, dark fruits, redwine indeed and amazing Brett and sophisticated funk. This is not in your face, but subtle subtle with an amazing balance. 160411 & 260511

A dark brown clear ale with a thick frothy and fluffy brown head. In aroma, a superb complex mix of herbs, licorice, grassy hops, light chocolate, plain beautiful! In mouth a beautiful Brett chocolate with nutty notes, herbal catty hops, smooth and delicious! On tap at Biere de Norma release at the brewery, April 7 2012.

Hazy reddish brown color with a small, light tan head that left nice lacing on the glass. Aroma of brett, wine, dark fruits, spices, some honey, and citrus. Taste of citrus, tart wheat, light spices, oak, vanilla, low acidity, and a tart finish.

Bottle, corked but no cage, thanks Shaun! Looks beautiful. This was lovely like every HF beer I’ve ever had. These saisons are so money. Lots of deliciousness going on here, lots of funk. I can’t do it justice, not much of rating here...I was too busy sticking my nose in it and drinking. Need some more, can see this one aging well.

[ Courtesy of kristina ]. Clear dark red brown colour with a large, frothy to cream, good lacing, fully to mostly lasting, light beige head. Aroma is moderate to heavy malty, roasted, caramel, moderate yeasty, brett, red wine, dark fruit - berries, light barnyard, wood notes. Flavour is light heavy sweet, light acidic and moderate to heavy bitter with a long duration. Body is medium, texture is oily, carbonation is soft. Amazing balanced ... so lovely ;O) [20110416]
