The first in our series of experimental Imperial IPAs – Release #1 is brewed exclusively with Cascade hops (from Segal Ranch) and Weyermann Vienna Malt. Our friend, Jeff O’Neil (the artist formerly known as the head brewer at Ithaca Beer Company… now redesigning the Peekskill Brewery) lent us a hand on this, our very first and long brew day on our 15bbl brewhouse. 8% abv.

Growler. Pours a pretty clear golden with a small and eternal whit head that leaves superior lacing. Nose is of pine, resin and citrus. Taste is moderately bitter and lightly sweet, offers more pine and citrus. Oranges, tropical fruits and alcohol is pretty well hidden. Body is medium and carbonation moderate. Yum!

750 ml bottle from the brewery. Bright gold color, lasting head. Aroma has a great pine upfront, lupulin, light citrus and a mild florals.

Flavor is as the aroma tells me with the addition of some citrus peel. Orange or tangerine. Mouthfeel is soft and gentle, bitterness is here but real mild for a 8% DIPA, no alcohol noticeable. Love an all cascade hop IPA!

750mL growler brought by Scott, opened at Ratebeer Farmhouse Magnum Tasting v1. Pours orange gold with an off white head. Aroma is dank. Flavor is caramel, date, pine, dank hop.

Poured from bottle thanks Scott for the Ratebeer Farmhouse Magnum Tasting. Cloudy golden orange with a thin white head. Aromas of citrus pine and resin. Taste is juicy papaya mango and bread.

UPDATED: JUL 25, 2015 Tap: Cloudy golden orange with a soapy white head, fluffy. Aroma of citrus rind, pine, resin. Slight bready sweetness. Flavor is quite juicy. Citrus, papaya, mango, tangelo. Some sugar cookie malt sweetness with some bread, pine, & bitterness in the finish. Slightly sticky. Good stuff, but I think I like SS #5 and #6 a little more.

Growler. Pours a hazy pale orange fading to pale yellow at the edges of the glass. Fluffy white head that has good retention & leaves behind significant lacing. The smell is initially sticky, resinous, orange and citrus. I wouldn’t have identified the cascade hops, likely because I’ve never had them paired with Vienna malt, but now that I know they’re there, I can definitely smell and taste it. Taste is sweet, lots of citrus, a moderate bitterness. Body is medium+. Carbonation is soft. Far from my favorite of the S&S series, but I like it.

Dégustée en fût au Farmhouse Tap & Grill de Burlington en compagnie de Mademoiselle Irina, François Moisan et Ju-Lo. Bière qui comme toutes les bières de cette formidable brasserie, possède un look absolument irréprochable: dorée comme le soleil, voilée et surmontée d’une mousse solennelle et plantureuse! Au nez, je fus surpris de n’avoir pas retrouvé l’habituelle Signature de la Maison. Il manquait ce côté sauvage, explosif et démentiel que j’aime tant dans les brassins habituels de Shaun. La souche saison et fermière n’y était pas. Du houblon qui se traduit par des agrumes et un côté aérien m’ont bien plu et une fois en bouche, l’ensemble m’a paru malheureusement plutôt ordinaire, voire quelconque. Un goût qui allie toutefois très bien le grain de la jeune céréale à la fraîcheur incontestée du houblon. Était-ce tout simplement une mauvaise journée pour moi? S’agissait-il d’un brassin moins réussi? Je dois absolument regoûter à cette bière et serai ravi d’apporter les correctifs nécessaires à ce rating, si besoin est.

Growler. Cloudy yellow pour with a white head. Mild pine and citrus hop bouquet. Well balanced with pleasant malty characteristic. Not a huge amount of hop bitterness. Mellow pine and grass highlights. Good body and mouthfeel.

Sample at the source. Poured a slightly hazy golden color with small fluffy white head. Aroma of funk, citrus, floral. Flavor had some medicine taste to it, grapefruit, sour. Medium body, thin texture, ok carbonation. Bitter to finish. Not bad.

Pours hazy golden with a finger of white head. Aroma of citrus, passion fruit, grass, light funk. Taste is mild balanced fruit sweet with a gentle bitter finish. Light, smooth body with soft carbonation.
