The first in our series of experimental Imperial IPAs – Release #1 is brewed exclusively with Cascade hops (from Segal Ranch) and Weyermann Vienna Malt. Our friend, Jeff O’Neil (the artist formerly known as the head brewer at Ithaca Beer Company… now redesigning the Peekskill Brewery) lent us a hand on this, our very first and long brew day on our 15bbl brewhouse. 8% abv.

[5265-20130426] Tap. Very mild bandaid grains aroma. Hazy, orange brown body with a medium-lasting creamy off-white head and nice lacing. Bitter muted lemon meringue cream flavour almost has a sweet finish. Medium body. Sessionable, great balance. (6/4/8/4/14) 3.6

(Rating #8,400) Bottle... Hazy deep-golden ale with a short-lived white head. The bouquet is a complex lupulin swirl of pink grapefruit, citrus peels and pine resin, with suggestions of armpit funk and biscuit malt. Medium-bodied with a watery mouthfeel and busy carbonation. Bittersweet, citrus and tea biscuit flavor. Lengthy, bitter, grapefruit rind and pith finish. Bottle courtesy of ctipping!

Growler from the brewery. Pours clear gold with a frothy white head. Nose of spicy pine, tangerine, hints of anise and grapefruit. Medium sweet flavor with moderate, zippy melon, grapefruit, light pale malts sugars, mild alcohol boost and strawberries. Medium to full bodied with fine carbonation. Lightly warming on the finish, somewhat resinous, with pine needles, melon, grapefruit and orange rind. Rindy citrus aftertaste. Very solid stuff.

In short: An aromatic and fruity blonde IPA with focus on freshness and refreshing qualities.
How: Tap at infamous Hill Farmstead 3rd Anniversary, winter storm in May.
The look: Cloudy dark blonde-orange body topped by a persistent small white head.
In long: Very aromatic nose with all kinds of fruits and floral undertones. Mouthfeel is typical HF IPA pillowy texture with plenty of soft bubbles. Taste has the typical signature HF single-hop IPAs bready/crackery smooth pale malts. Relatively low sweetness sensation for its size. Fruity hops and more fruity hops. As usual for HF IPA surprisingly, very bright and fresh sensation, a clean refreshing bitterness, nothing resinous or sticky here. I’ve had many single-hop cascade IPA and somehow I didn’t quite recognize the Cascade here, it tasted like a HF IPA, that simple. You don’t need to be a rocket scientist to realize that Hill Farmstead make awesome IPAs, and it just so happens that I’m not a rocket scientist.

on tap at hill farmstead’s 3rd anniversary. pours hazy golden with a creamy and frothy white head, very good retention and lacing. juicy cascade filled with citrus, pine and a hint of tropicalness - borderline dank, crisp malts with a touch of caramel - never overwhelming, spiciness and floralness. average carbonation, light to medium body, very nice citrusy-lightly piney finish. balanced, juicy and very very good!

On draft @ Hill Farmstead 3rd Anniversary. Light hazy orange with a huge fluffy white head and usual HF intense lacing. Aroma is intensely hoppy and of orange, lemon, pine, lichee and grapefruit. Taste is slightly to moderately sweet with a lot of citrus in there, slight pine notes and a subtle but interesting herbal/floral presence. Moderate bitterness. Medium body. Soft carbonation. Alcohol is completely hidden. Very good DIPA. Intensely citrusy. Well balanced. Not too sweet. I loved it. Probably my favorite from the S&S series.

Draft at Hill 3rd Anniversary. Pours a hazy yellow orange color with a finger of bubbly foam. Great citrus, pine and lots of grassy bitterness. Great contrast from start to finish... The beginning is pure citrus, juicy mandarin that leads into a earthy grassy resinous finish.

Draft at 3rd Anniversary Party with Alan, Bill, Joe, Evan, and Eric. Glowing murky golden pour with massive fluffed white head, good lace. Nice and hoppy... crisp orange zest, marshmallow toast malt and pine. Maybe a little hot on the mouth but still nice, lots of resin profile in this society. Interesting but Cascade isn’t my favorite hop out there.

Swingtop HF growler. Pours a slighlty hazed orange color with a nice fluffy white head. Good lacing as the head settles. The aroma includes notes of orange rind, apricot, and some slight florals. Juice, sweet, and citrus notes end with a nice lingering bitterness to this beer. Medium mouthfeel. Very nice.
