750 ml bottle that I got at the brewery on August 21, 2014. Hazy yellow, small head. Sour herbs and I guess dandelions aroma, this is not familiar to me. The taste is a bit the same, some fruitiness but sense of honey, very sour aftertaste. It’s good but so weird!

Bottle received in trade. Thank you! Pours hazy vibrant yellow with a rather small frothy white head that leaves lots of sticky and spotty trace on the glass while dissipating. Smell is funky, fruity and funky with crackers, lemon juice, dandelion stems, honey, pineapple, mango, barnyard, moist hay, dry soil, grape skins and lemon zest. Taste is tiny sour, slightly fruity and slightly floral with crackers, lemon juice, dandelions, moist grass, barnyard, dry soil, minerals and lemon zest. Mouthfeel is dry, tart, tiny astringent and light bodied. Finish is tiny sour, slightly fruity and slightly floral with crackers, lemon juice, pineapple, dandelions, moist grass, dry soil, lemon zest and hints of minerals and tonic water. Heavy on the dandelions. Almost quinine-like astringent bitterness. Acquired taste but I like it alot!

(Bottle) Pours hazy yellow with an off-white head. The aroma holds some grass, white bread, citrus, bit of tropical fruits and light funk. The flavour is dry, near medium acidic a bit bitter (maybe from dandelions). Citrus, wheat, bitter grass, bit of fruit and light funk. The mouthfeel is tight and clean with medium carbonation. Light to medium bodied.

Bottle at Mikkeller & Friends, October 11th. Pours a semi clear yellow with some lime tint and a large frothy white head. Aromas of citrus, elderflower funk, stable, honey and some flower notes. Taste is citrus, elderflower, kiwi, funk and honey. Mouthfeel is quite tart and dry sparkling crips palate. Extremely good!

Tasting at Matt’s
Hazy blond color, with green hue, and generous head. Strong spicy aroma, with good character, and also a touch of hazelnut. Highly carbonated; very dry; also fairly acidic, lemony, tart, moderately astringent, close to some mellow Lambic.
Excellent, very well brewed; the more I drink of it, the more I like it.

UPDATED: OCT 2, 2014 Poured out of 750ml bottle purchased at brewery this summer to top off what I guess was last summer-like Saturday of the year. Loved the light golden color and medium-frothy head. More frothy than any other Hill Farmstead that I’ve tasted...not a bad thing. It quickly dissipated. I smelled aromas of grass, citrus, and...possibly, hay?? I thought it had a soft carbonation - which I especially liked. It has a light body, which a summertime brew should have but a a bitter, long-lasting finish. Which brings us to the taste. It is one sour beer. What a saison should be, I guess. Yet, from these guys, I had hoped that they may have broken tradition a little bit and cut the sour/bitter with the honey. I can’t taste the honey nor the dandelion. If you want to taste dandelion, I’d suggest Pistil from Magic Hat brewery (though that’s an ale). If you’re into saisons, you will probably like this a lot. The one thing I will say is that it doesn’t have that spicy taste that turns me off from the style. It’s actually grown on me a little as I’ve been writing this. Yet, saisons will still not be a go-to brew for me and even the great microbrewery can’t change my mind.

Pours a hazy and a bit dull yellow with a small white head that leaves good lacing. Nose is herbal and spicy, floral. There is some light dill in there, not sure why I keep getting that lately? Black pepper also. Taste is pretty dry and lightly tart, offers some fresh cereals and dandelion wine. Some peaches or at least generic tart yellow fruits. Body is light to medium, carbonation medium to high. Overall a really fine drink, thanks Luk_!
