Bottle from the release. Pours with a massive head, lightly cloudy, golden color, a slightly different/darker shade than normal likely due to the honey. Nose is herbal and loaded with fresh cut grass. White pepper puncuates kumquats and a warm sea breeze. Extremely drying in the mouth, what is left of the honey is merely the suggestion of farm fresh product. The dandelions show up in the form of a mild astringency that I find they bring to most beers. An interesting but challenging beer, with the dry astringency being almost overwhelming on larger sips.

Bottle: The aroma consists of moderate florals, light honey, faint lemon peel, and a touch of herbal notes. It pours a hazy dull golden-orange with a small white heat that quickly fades to a minimal film outlined by a thin soapy ring. The flavor starts with with a quick dose of citrus. There is some light florals in the background. The finish has light-moderate lemon and lemon peel. It’s light bodied with light-moderate carbonation.

Bottle: Thanks, Alex. Super murky, cloudy bright golden body with a sudsy, foamy white head that hangs around for a few moments before receding to a small collar. Aroma loaded with that familiar Hill terroir; loads of floral notes, musty cotton, mild barnyard funkiness, stone fruit, a touch of wood, faint lemon, plenty of grassiness. Very soft flavor. A nice wet cotton blanket funk explosion with a solid backing of minerals, modest stone fruit skins, wet hay, a touch of lemon, faint cobweb & barn stall funk, & a nice finish of grass & straw. Crispy mouth feel; light, yet full. Lovely saison.

Tasted on 1/7/12 from a capped 750mL bottle. Pours a hazy yellow/orange with a thick, rocky white head that slowly recedes to fluffy lace, leaving thick residue along the inside of the glass. The nose is floral and herbal, pollen dandelion, honey, spicy yeast and pale malt. The flavor is pale malt, bitter dandelion, lemon peel, a lightly honeyed note, and spicy/dusty yeast. The body is light with lively carbonation and a long pale malt, spicy yeast, and lightly bitter floral finish.

Bottle poured in a snifter. Made with spelt from Vermont, American hops, wildflower honey, dandelion flowers. Hazy apricot hue with one inch of dense, cottony head. Nose is a blend of lemon peel, light funky hay, dandelion, wet grass, floral. Can’t stop smelling it. Complex as potpourri, but subtle. A bit of sweet pear, a splash of vinegar, a touch of apple juice and some lemonade tartness in the flavor. Floral notes settle into the sides of the tongue, with a zesty lemon-lime character up front. Slightly dry, very quenching. The light body is silk on the tongue. Zesty carbonation; champagne-like. Not peppery; more lemony and tart. Very refreshing, complex but not combative.

Yellow color with a good sized white head and lacing foam. Earthy, brett aroma. Dry flavor with more yeast, as well as flowers and leaves. I got the dandelion but not the honey. Dry, lightly spiced finish.

Sample at semi-S&G tasting (since the music was shut down halfway through). APPEARANCE: clear blond beer, small stable white head. NOSE: lemon, fresh, zeste. TASTE: lemon, fresh, little hoppy, grains, very balanced.

Bottle 07/2014. Pour has a wheat golden color with a thin coating of white head. Aroma has mild tartness, yeasty goodness, a bit of fruit, and green dandelion. Mouth feel is light and the carbonation good. Flavor has more of a sour side than expected, light acidity, green dandelion, mild hop bitterness, and a clean lasting finish. This was real nice and I quite enjoyed it.

Bouteille partagée par Patrick, merci. Une robe jaune avec une mousse blanche. Une nez de pipi de chat, fleurs blanches, malt pils. La bouche offre un côté bizarroïde avec de qui semble de la bile, des fleurs, de la pisse, beaucoup de fleurs de pisselits en fin de dégustation.

(Bouteille datée de juillet 2014) Voyons ce que cette jaune Vera Mae a dans le ventre. Je sens des fleurs terreuses et poivrées, de la paille, du blé, du seigle, du citron et des craquelins. Je goûte à des fleurs, à des feuilles, à des racines et à des herbes. Il y a aussi des épices et des fruits acidulés comme des citrons. Son corps est légèrement huileux et pétillant. En finale, tout est bien sec, suret et poivré. Très belle bière. Bien facile à boire. Elle est complexe et singulière. À reboire n’importe quand.
