COMMERCIAL DESCRIPTION
Um das Thema "Granit" im Bier noch mehr zu verankern, beschlossen wir 2008 erstmals ein GRANIT BOCKBIER einzubrauen, das in alten Granitsteintrögen vergoren wird. Perfekte Vorraussetzungen für ein solches Bier, bietet das Sudhaus aus dem Jahre 1929. Während der Hauptgärung in alten Granitbottichen hat das Gestein Zeit seine Geschichte an das Bier weiter zu geben. Um auf Temperatur zu kommen starten wir diesen Prozeß mit glühenden Granitzwecken. Die Steine werden über offenem Feuer erhitzt und kühlen dann schlagartig in der Würze ab. Die Bierinhaltstoffe karamellisieren und die Hefe erhält optimale Gärbedingungen. Zusätzlich wird die Hefe ganz klassisch "aufgezogen" d. h. von Kübel zu Kübel geschüttet um diese zu belüften. Dank der offenen Gärbottiche können wir die Kräusendecke abschöpfen und somit unedle Hopfenbitterstoffe entfernen. Daraus resultiert ein dunkler Bocktyp mit schönen Karamell- und Röstaromen und einem wunderbaren Hopfenbuket. Nach ausreichender Lagerung in den alten Gewölbe-kellern, ziehen wir den Bock bereits im Juli auf die Flasche, damit bis Weihnachten eine Nachreifung stattfinden kann.

Bottle @ DØE. Appearance: pours clear dark brown with good off-white soapy head and lacing. aroma/taste: caramel, bread, brown sugar, nuts and some straw hints. palette: medium to strong aroma, average carbonation, medium to full body, distinct caramel sweetness, low to average bitterness, medium duration and an oily texture. Overall: tasteful roasted bock, but somewhat sweet.

bottle at home. brown hazy color. big tan head. smells fruity, grapes, acidic, citric, pears, red apples, some alcohol, some sweetness, a bit liqueurish. full body, soft carbonation, full mouthfeel. taste malty sweet, some honey, citric, liqueurish, alcoholic, grapes again, some red berries. finishes with malty sweetness, citric notes, light dried fruits and lightly alcoholic. smell is very lovely, taste is not as good, almost a bit boring. but overall quite nice beer.

Bottle from Geiserich, thanks! (Euro swap 2015-2). Pours red brown with a light beige head. Caramel, elderberries, unripe cherries, lightly burnt cane sugar, dark breadbread, iron, molasses, sweet apples. Sweet, malty, creamy, a bit harsh.

Brown with a fizzy tan head. Malty, nutty, hints of caramel and cherry. Builds to a lift and drop with the finish. A bit earthy. Some raisin as well. Interesting.

Tap at Camba Bavaria. Dark red with a tall, fine head. Almost black. Nose of caramel, toffee, a bit oxidized. Somewhat burnt and estery flavor, lots of caramel, bread. Rather sweet and milky, and a bit too oxidized.

Draught@Camba Tap House 2015/3. Ideal pairing with their tasty house chili corn carne. Smooth, well-rounded, none too sticky sweet Steindoppelbock, showcasing caramel drop suave dark malts, bitter chocolate against a woody dryness and a flowery noble hop backdrop. Creamy, yet dry: must be those granite steins and attentive Kräusening process. Very elegant, mature composition.

Draught. Mahogny ruby in color with an off-white head. Nuttyness, caramel sweetness, dark bready and fruity sweets too in aroma. Raisins and plums meets toffee and dark bready pumpernickel in taste. Even a bit dry in the end.
