Pours purple with a stray bubble or tow and a nice neck on the glass. Smells of honey and tarte. Tastes tarte with a nice warming alcohol presence and some dry honey on the finish. Another great mead from this apiary.

Bottle at Papsø’s - Thanks. Clear deep red - white bubbes. Red berries, black berries, honey, not sweet honey, tartness, cherry notes, fruity, very pleasant, dryness, light bitterness. Lovely.

UPDATED: APR 4, 2011 Bottle at Papsø tasting. Pours deep red with no head. Aroma is black currants, wood, alcohol and honey. Flavour is vinous with notes of black currants, a little honey and alcohol and a faint tart hint.

Botella. Clear red-brown colour. Sweet honey black currant berry very pleasant aroma. Good filling sticky mouthfeel. Flavour is quite sweet and pleasant with honey and berry black currant. Sweet berry finish, very nice.

Sep 17 2007 from 750 ml bottle (City Market, Burlington, Sep 2007). Cork is much fresher and tighter this time; guess the other bottle was just unlucky. Pours a slightly hazy dark violet, still, with slow-subsiding thick legs….lovely, luscious deep fruity nose, black currants strongly present, and a rustic, dark honey scent as well, light hints of unripe grapes and new oak….an elegant mixture of tart and sweet fruits on the tongue, with acid tartness ultimately winning out, quite tannic and woody, sweetness is just light and cuts the harshness at first, dryness comes on strong in the finish…..a bit brash and unrefined, but the overbearing, pungent qualities are excellent for a simple, hearty beverage to go with rustic, gamey foods. Probably my favorite from this meadery overall. Very little honey character overall; this probably would not win points in a homebrew competition, but I enjoyed it a lot for what it is.

From bottle at Sunset Grill. Pours deep golden orange with no head. Aroma is solid fruity, slight phenolic and dry wooden. Wooden, fruity and phenolic honey herbal. Lingering black currant note and honey herbal. Ends dry.

Pours a brilliant garnet red. Aromas of mixed berries and earthy honey. Rather tart. Black currant for sure with notes of under ripe raspberry. Hints. Of honey with a bit of comb included. Nice sipper.

Bottled. A red mead with an off-white head. The aroma has notes of alcohol, black currants, and honey. The flavor is sweet with notes of alcohol, wood, honey, and black currants. Thanks yespr for sharing.

Bottle at Papsø, thanks yespr. Clear orange red coloured with a small off-white head. Sweet aroma of honey and black currants. Sweet and fruity flavour of black currants and berries with notes of honey. Tart finish of berries.

Bottle. Pours ruby. Aroma is blackcurrant, honey and sweet fruit. The flavour is quite acidic with notes of honey and blackcurrant. Good balance.
