Bottle @ home. Thanks to Andy as part of Secret Krampus. Hazed dark orange pour with a white head. Smells sour, briney, and of green apples. Big time celery, lemon juice, and paper. What the h? Flavor is gross. Tons of green apple, celery, and olive skins. Brine, lemon juice, and tons of caramel malt. This is crap.

Bottled. Poured slightly cloudy medium orange with a dense, sticky, well-retained white head. The aroma picked up grassy and grainy notes plus detergent over an odd blend of toffee, fruity, and caramel notes.. not offensive, but not enticing. The flavor found muddled, mostly fruit and citrusy bitterness over bready malt, honey, and a touch of caramel.. lots of lingering citrus bitterness on the finish.. a hair better than the nose, but still not all that good. Light-medium bodied, bitter, and scratchy on the palate.. lots of residual sugars in the end.. just an OK flow to it.

Debut Tap @ The Beer Bistro on IPA Day and served in tulip sporting the company logo: Amber hued with a fading frothy head but very good lace. The aroma has dusty yeast esters, grassy and herbal mild hop vapours, caramelized and bready malts, and slight clove. I found the nose a tad weak. The taste is twangy and slight peppery but not all the bitter, smooth and a bit malt forward. Very English on the palate but still too heavy to be viewed as an English styled IPA... more akin to a hoppy amber if you ask me. The mouth feel is lively and quite smooth with a nice light bite on the finish. This is the best part of the beer IMO. This needs to be cleaner profile and using a tad less Vienna malt but I will take a "wait and see" attitude towards this brewer considering it is the 1st batch and give a generous score.

UPDATED: AUG 23, 2012 Draft on tap at the Oak Park Microbrew Review (Chicago, IL). Pours a richer deep copper hue, some glowing golden edges. Just a kiss of haze, vibrant glow. Cakey tannish head is big, laces well, and sticks around big. Aromas are more earthy bitterness, florals and gentle citrus. Biscuity and a touch toasty, some dry toast, bready malts. Initial is a bit oniony, with some grass and florals. Some dryness, bit toasty and bready, some touches of biscuit, some mellow sweetness, dryness comes back, a bit toasty, earthy hops and a bit off. Dryness. A solid beer, a bit big, a bit forgettable.

Bottle to snifter (thanks jmborggren). Looks good; a murky burnt-orange with resinous off-white lacing. Smells and tastes semi-sweet and hoppy with a solid mouthfeel. Enjoyable.

Clear amber with a large tan head. Aroma is mega floral with caramel and grains. Taste is floral as well with sweet malt and moderate bitterness.

Aroma is citrus, mildly sweet malts and a hint of wheat. The flavor is citrus, biscuit malts, mild chemical off notes and a bitter finish.

Bottle. I’m so proud of them for spending 2 years coming up with the perfect IPA recipe. Unfortunately, I think they are definitely in the wrong business. Pours deep amber, super dark. Caramel, faint resiny hops, bland malt and a touch of fruit. On tasting, there is a mild bitterness, almost no hop flavor. The caramel is overwhelming. What the hell were they thinking? This is an abomination as far as IPAs are concerned.

12oz bottle from Binny’s Lincoln Park. Pours a cloudy, golden-copper colored body with a finger-width, dense and frothy, beige head that dissipates slowly and leaves a moderate lacing. Aroma is floral grapefruit hops with some bready caramels and a light earth. Flavor is similar. Bigger grapefruit citruses up front with mostly florals and a bit of a stale, earth and grass. Somewhat bready caramels in the middle with a medium-light sweetness. Finishes clean and balanced with a medium bitterness, some caramel, and a decent citrus backing. Fairly lengthy aftertaste following a medium body and a moderate carbonation. Overall, not bad, but pretty forgettable. Well balanced for the ABV% and fairly clean without an excessively sweet and annoying caramel maltiness, but the hops aren’t overly complex or inviting. Not bad for a first beer from a new brewery.
