Hop Dam has been a long time in the works, and its design required us to build a large stainless steel hop dam for our kettle, just for this beer! It was worth all the effort, because this beer is extremely hoppy and very satisfying, using 50% more hops than our Mean Manalishi Double IPA, which was voted Best Double IPA In The World by the US Beer Tasting Championships. Hop Dam is 10% alcohol by volume, and really hoppy, with a bitterness level that is very high but refined and therefore refreshing – its like kissing a hop!! Along with all the standard hop additions, it is also mash-hopped, first-kettle-hopped, and dry-hopped!!! Hop Dam is a 100% American-style IPA, dominated by the top-rated, assertive and refined Amarillo hops, along with lots of aroma and flavor from Columbus, and Cascade, and the wonderful Summit hops – the very special dwarf hop plant picked by hand, and sought-after for its great flavor and aroma. These hops work great together, and make Hop Dam TRIPLE IPA our new standard for hoppy beers!! It will be available for only a few months, so get Hop Dam while it lasts!

Bottle. The look is copper in color, beige colored head, and ok. The smell is super hoppy, grassy, resin, and super hop notes. The taste is resin, fruit, hops, grassy, alcohol, caramel.

Pours a clear amber color with a medium sized dense off-white head. Aroma of caramel, fruit, citrus and light toast. Flavor is a lot of pine and citrus hops and light toasted malt. Bitterness sticks around for quite a while.

Amber brown hazy pour. Aroma is thick malty sweetness and syrupy hops. Taste is syrupy hop sweetness, bitter hops that claw at the palate, dry hoppy finish with warmth from the booze.

A solid dipa. Pours a burnt orange with a lot of sediment. Aromas are tropical fruit, corn syrup, and resin. Flavors are hoppy and sweet. It’s a big beer. Really good.

Pours red/orange with a big white head. Sweet, caramel, fruity aroma. Flavor is sweet in the begining followed by a strong, very strong and long bitterness with notes of pine hops, alchool, some yeast and a unknown but very familiar flavor which is quite strong.

Bottle. Hazy light amber appearance. The aroma has notes of caramel, resin, pine and grapefruit and orange zest. The taste is in initially caramel but then finishes with a huge resiny piny hop hit. I feel like I’m being slapped on the tongue with a pine branch soaked in mango juice. Nice! Leaves a huge lingering bitterness.

651 ml. bottle. Pours a medium, well retained, tiny bubbled, ivory head, with extensive lacing, over a clear dark amber (SRM 15) body.....nose is pine, resin, grapefruit peel, light toasted malts with cereal, no esters, balance to the hops....taste is sweet with toffee/caramel notes to start, then pine, resin, lighter citrus, floral notes, then heavy lingering bitter tones, no esters, balance very much to the hops.....mouth feel, heavy of medium body, slightly sticky, alcohol warmth present, moderately astringent, carbonation creates a creamy mouthful. The hops are in ascendancy in this beer, and there is only moderate malts to respond. It is difficult to balance beers such as this because the malts become almost toxically sweet as they are amped up. (Taste Dogfish Head 120 minute.) As it warms the malts arrive somewhat more and create more balance. It will be interesting to see if the Triple IPA becomes a separate style. BJCP 9/3/15/4/7
